A mainstay of Korean cuisine, homemade baek kimchi (white kimchi) is simple to prepare at home using napa cabbage, daikon radish, garlic, and vinegar.

Ingredients

  1. 2 pounds lean ground beef
  2. 1 large sweet onion (such as Vidalia®), diced
  3. 1 tablespoon garlic powder
  4. 2 (15 ounce) cans whole tomatoes, cut into chunks
  5. 2 (15 ounce) cans mild chili beans
  6. 1 (15 ounce) can tomato sauce
  7. 1 (15 ounce) can kidney beans, drained and rinsed
  8. 1 cup ketchup
  9. 1 (6 ounce) can tomato paste
  10. 2 (6 ounce) jars mushrooms, drained
  11. ¼ cup chili powder, or to taste
  12. 2 teaspoons white sugar (Optional)
  13. 1 ½ teaspoons salt
  14. 1 teaspoon ground black pepper

Instructions

  1. Heat a large skillet over medium-high heat. Cook and stir beef, about half the sweet onion, and garlic powder in the hot skillet until completely browned, 5 to 7 minutes.
  2. Mix tomato chunks, chili beans, tomato sauce, kidney beans, ketchup, and tomato paste in a large pot; bring to a boil and reduce heat to low. Stir the ground beef mixture and mushrooms into the tomato mixture; season with chili powder, sugar, salt, and black pepper. Cook chili at a simmer, stirring occasionally, until the flavors blend, about 45 minutes. Top individual servings with diced sweet onion to serve.

Thick & Savory Chili Haiku: “This was good, not great. Ketchup & sugar – too sweet. But I liked thickness.” The consistency of this chili was perfect, but the taste didn’t really wow us. Between the 15 oz. tomato sauce and the 1 c. of ketchup, it was heavy on the tomato taste, and that, coupled w/ the overall sweetness just put it into a no-repeat-stack. I love trying out different chili recipes and I can only imagine that this one would definitely appeal to many people who prefer that touch of sweetness, but for us it just wasn’t a success.
