Ingredients

  1. Nonstick cooking spray
  2. 1 cup crumbled butter crackers
  3. 1 cup oats
  4. 15 ounces ground chuck
  5. 15 ounces ground pork
  6. 2/3 cup diced onion
  7. 2/3 cup whole milk
  8. 1/2 cup chopped fresh parsley
  9. 1/2 cup diced celery
  10. 1/3 cup ketchup
  11. 1/4 cup diced green pepper
  12. 2 tablespoons Worcestershire sauce
  13. 1 teaspoon kosher salt
  14. 1 teaspoon freshly ground black pepper
  15. 1 teaspoon paprika
  16. 1 teaspoon yellow mustard
  17. 1/2 teaspoon dried marjoram
  18. 1/2 teaspoon dried thyme
  19. 1/2 teaspoon seasoned salt
  20. 2 eggs, lightly beaten
  21. 2 pounds potatoes
  22. Salt
  23. 2 tablespoons milk
  24. 2 tablespoons sour cream
  25. 2 ounces unsalted butter, softened
  26. Freshly ground black pepper
  27. Your favorite gravy, for serving

Instructions

  1. For the meatloaf: Preheat the oven to 350 degrees F. Grease a muffin pan with nonstick cooking spray.
  2. Combine the cracker crumbs, oats and milk to soften in a medium bowl. Combine the ground chuck, ground pork, onions, milk, parsley, celery, ketchup, green peppers, Worcestershire sauce, salt, pepper, paprika, mustard, marjoram, thyme, seasoned salt and eggs in a large bowl. Add the oats mixture and mix well, but do not over-mix.
  3. Portion the meat mixture into eight 8-ounce cupcakes and place into the prepared muffin pan. Smooth the tops of each portion. Bake until the internal temperature reaches 165 degrees F, about 30 minutes. Unmold and set on paper towels to absorb any additional liquid. (The meatloaf can also be cooked in a loaf pan.)
  4. For the mashed potatoes: Peel the potatoes and cut into 1-inch pieces. Place in a pot covered with cold salted water and bring to a boil. Cook until the potatoes are fork tender, 15 to 20 minutes. Drain well. Place the potatoes, milk, sour cream and butter in a mixing bowl and mash until smooth. Season with salt and pepper.
  5. For immediate enjoyment, using ice cream scoop, scoop the potatoes on top of a meatloaf cupcake. Serve with your favorite gravy.

I have a son-in-law and a best friend who love meatloaf…me? not so much. I made these and they came out exactly like the picture! I found cupcake liners an dome lids so I was able to freeze them without them losing their shape. They look so good! I made some gravy to serve them with and tried them myself…I think I have just been converted to a meatloaf lover! Most of the ones I have had in the past had lots of ketchup, which I really dislike. These had just the right amount. I will be making them for a Superbowl party. THANK YOU for a great and easy recipe!

Note to my dumb self: put a lined cookie sheet under the cupcake pan. I almost caught my kitchen on fire. The grease from the meatloaf runs over the side & starts bubbling. When it hits the burner it flames & smokes. OOOH!! 🙁 I saved some meatloaf aside & browned it for gravy. Haven’t tasted this recipe yet but it smells AMAZING. I’m cooking it longer than the recipe called for as the top does not seem to be browned yet.

made this recipe for a friends and family get together and it was awesome. Not only did everyone love it, but is very easy to make for a larger amount of people when making the meatloaf I added some taco seasoning for a little different flavor.

These were so delicious! We used a popover pan since the cups are deeper. Made horseradish potato puree instead of the potato recipe here. Also used red bell pepper instead of green as I think green peppers overpower other flavors. YUM!!! Best meatloaf ever! Definitely a keeper, & worth the effort.

I made this recipe just as it’s printed and it was very good. The recipe calls to add milk twice but it’s only listed once in the ingredients. I added all the milk to the oats & cracker crumb mixture. This recipe made 17 meatloafs but the 2 lbs. of potatoes only covered 13 meatloafs. Maybe my scoop was too big? Wish I could attach a picture, they looked just as great as they tasted. When I posted a picture on facebook, lots of people commented postively!

This is Sheperd’s Pie Americanised! How could it not be delicious? We make “Meat Loaf” in squares for a quick fried version of oven Baking Style. Then into a sandwich. Everything can be in a cupcake’s pan. Not only relegated to Sweets. Love this recipe to creat more than for Two.Freeze the Rest. Only suggestion? Heat Milk Prior to Adding to cooked Potatoes. Believe me,better results. Can cut recipe easily into a half amount as we do,no un~pleasant results.
