Ingredients
- 1 egg
- 1 ½ pounds ground beef
- 1 (14 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), undrained
- 1 sleeve buttery round crackers (such as Ritz®), crushed
- 1 teaspoon onion flakes (Optional)
- 1 ½ teaspoons garlic powder, or to taste
- 1 ½ teaspoons seasoned salt, or to taste
- ½ teaspoon ground black pepper, or to taste
Instructions
- Preheat an oven to 375 degrees F (190 degrees C).
- Beat the egg in a mixing bowl, then add the ground beef, tomatoes, and crushed crackers. Season with onion flakes, garlic powder, seasoned salt, and pepper. Mix until evenly combined. Pack into a 9×5 inch loaf pan.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

I did tweak this recipe a bit. I added 1 can of hot Rotel and 1 can of fire roasted Rotel, half of an onion and Sweet baby Rays barbecue sauce as a glaze. My fiancé loved it.
I don’t usually think it’s fair to give a recipe a rating if I didn’t follow the recipe. However, I made a few tweaks to it based on reviews other members gave and I’ll base my rating on that. First of all, we all LOVED it. It will definitely be in our regular rotation. I doubled the recipe and here is what I put in it: 3 lb hamburger 4 eggs 2 (14 ounce) cans diced tomatoes with green chile peppers (such as RO*TEL®), undrained 1 sleeve buttery crackers, crushed (I used Club Crackers) 1 medium onion, chopped 1/2 tsp onion powder 1 T garlic powder 1 T seasoned salt 1 tsp ground black pepper 1 T Worcestershire sauce 1 T steak sauce Ketchup with a little brown sugar stirred in to put on top I mixed together everything except the hamburger, ketchup and brown sugar. Then put the hamburger in and mixed it until incorporated. I put it in a 9×13 pan and put the ketchup/brown sugar mixture on top. I baked it at 375 for 1 hr 15 min. Then I turned the oven off and let it sit in it until I finished preparing the mashed potatoes and corn.
We have had this recipe saved for years. My husband asks me to do this recipe often. We follow the directions, but I use 2lbs of meat since I’m opening 2 packages anyways and I just increase the seasonings and I also use two eggs. We throw in a few chopped onions also. I divide this into two containers and make two diff sauces. I prefer more ketchup style and my husband likes a brown sugar/ketchup/mustard mix for the topping. This is moist and warms up great as leftovers! I don’t make any other recipe of meatloaf now!
I really never cared for meatloaf (it always seemed so dull) until I tried this recipe. I have made this numerous times now & it’s one of our favorites. It is moist but holds together well (if you let it cool a little first). I use brown gravy with it but if you prefer the tomato glaze, you could add it instead.
Added grated sharp cheddar and splash of worstershire sauce

Unfortunately, I’m not a fan of this recipe. It was bland. I will stick to my usual recipe containing diced bell pepper. I think that’s one of the major things missing for me. Thanks anyway.
I followed this recipe to the letter (added ketchup to the top for the last 10 minutes of cooking). It was sooo good. Have made it several times now. My boyfriend requests it on a regular basis.
This will be my new go to meatloaf recipe. Super easy to make & my family loved it. I followed the advice in other reviews & added an extra egg. Also, I needed to do it gluten free so omitted the crackers & used 1/2 cup cooked quinoa.
I followed the recipe exactly as written. It was so easy to make and turned out fantastic. I never would have thought of putting in the tomatoes but was surprised at the richness they added. Great recipe!
I’ve made this several times for the family. Very rarely are there leftovers. But in those cases you get to have a toasted meatloaf sandwich the next day. Yum. I don’t experiment much. But I did cut up some cheese and placed it inside. That was pretty good.
Loved it, but felt it had too much filler. I’ll decrease the buttery crackers by only using a half sleeve and use 1/2 a can of Rotel, drained. 2 eggs instead of one.
Excellent. Great flavor, super moist. Our go-to meatloaf recipe from now on! Didn’t have onion flakes, so omitted. Didn’t use salt (there was plenty from the Ritz), added 1 T Worcestershire to meat mixture. Otherwise, followed recipe as-is, used a 10 oz can of mild Rotel, drained (all I had in hand)
This is an easy & tasty recipe! I drained the Ro-tel & added an extra egg. I also made a glaze with bbq sauce, ketchup & a little mustard. Everyone loved it including my 10 month old! It’s definitely going in our rotation.
I loved this meatloaf recipe and just like it says it is quick and full of flavor. I used real onions chopped and the half hamburger and half pork mixture that you can get at Walmart . I added an extra 10 minutes to cooking time for the real onions and I like my meat really really done . It was perfect and was all gone in a sitting. I will be making this again real soon . This is a winner! Followed recipe exactly, except used onion powder instead of onion flakes, and we placed 3 pieces of bacon over the top of it. Seriously, this is THE BEST meatloaf I’ve ever tasted!

Very good. Really liked using Ritz crackers instead of breadcrumbs. I did not use any tomatoes and only used 1/2 sleeve of the crackers .served with mashed potatoes and brown gravy.
