The Best Waffles

Even though they just take a few minutes to prepare, these bacon-topped fried green beans taste like they have been cooking all day. Both members of our family and visitors adore them.

Ingredients

  1. 7 ounces unsalted butter, at room temperature
  2. 6 tablespoons white sugar
  3. 2 teaspoons vanilla sugar
  4. 1 pinch salt
  5. 6 eggs
  6. 2 ½ cups all-purpose flour
  7. 2 teaspoons baking powder
  8. ⅞ cup heavy whipping cream
  9. 1 (1.5 fluid ounce) jigger sparkling water, or as needed
  10. cooking spray

Instructions

  1. Preheat a waffle iron according to manufacturer’s instructions.
  2. Combine butter, sugar, vanilla sugar, and salt in a large bowl; beat with an electric mixer until smooth and creamy. Add eggs one at a time, beating well after each addition.
  3. Combine flour and baking powder in a bowl. Beat into butter mixture 1/2 cup at a time, alternating with cream. Add a dash of sparkling water in the end to loosen up the batter.
  4. Spray the preheated waffle iron with cooking spray. Pour batter into waffle iron, working in batches, and cook according to manufacturer’s instructions, 3 to 5 minutes per waffle.
  5. If you want to reduce calories, you can use half milk, half cream, but with cream they are to die for!

I’d like flakybabe to use sour cream in place of whipping cream along with her other improvements to the recipe. It’s the way I’ve made waffles, or my mom before me, for 80 years

Followed EXACTLY(half n half) and I had thick, hefty waffles. Pretty disgusting, I added water to loosen, they were better after a little tweaking. Definitely not worth the calories.

I would say there was way too much butter and not enough flour. The ratios seemed off. Unlikely success, but it actually tasted good.

Excellent recipe! I replaced the vanilla sugar with extract. Other than that, I followed the recipe the first time I made it. These waffles don’t need any twinking, but, the 2nd time I made these I whipped the egg whites, the yolks and heavy cream each separately. They were light, crunchy on the exterior but soft and fluffy in the middle. This recipe is a keeper!
