Ingredients
- 1 tablespoon vegetable oil
- 1 cup diced onion
- 2 tablespoons red curry paste
- 2 tablespoons Sriracha sauce
- 2 teaspoons grated fresh ginger
- 1 teaspoon grated fresh garlic
- 4 cups peeled and diced sweet potatoes
- 2 cups peeled and diced carrots
- kosher salt and freshly ground black pepper to taste
- 3 cups vegetable broth
- 1 cup coconut milk
Instructions
- Heat oil in a large pot over medium-high heat. Add onion and saute until soft and translucent, 3 to 4 minutes. Add curry paste, Sriracha sauce, ginger, and garlic; saute until fragrant, 3 to 4 minutes. Stir in sweet potatoes and carrots; season with kosher salt and pepper.
- Add vegetable broth and bring to a boil. Reduce the heat to low and simmer until vegetables are fork tender, 20 to 25 minutes. Turn off the heat and puree with an immersion blender until soup is smooth. Stir in coconut milk and adjust seasoning, if necessary.

I love this soup! My winter CSA has carrots every week, and sometimes sweet potatoes, and so I’ve already made this twice in the last month. So tasty! Just to make life simpler, I add the whole can of lite coconut milk rather than just a cup (less to keep in the fridge). Tastes delicious!
I added Sambal Oelek instead of Sriracha.
Very tasty! I did some modifications based on comments and my family’s limited tolerance to heat. I used tomato paste and curry powder instead of chili paste and siracha. Also used lite coconut milk only because that’s what I had. I added spinach at the end for more chew. Great base recipe for me to work with!
Absolutely awesome recipe!! Easy, flavorful sooooo good. I added a bit of fresh tumeric to the recipe and then topped the finished product with the lime wedge, siracha and fresh cilantro. Ughhhh really yummy. Try it 🙂
This had a really nice flavour, but boy, it was hot! (And we generally like spice.) I would add less sriracha sauce to start.
