Texas Chicken Quesadillas

I have never made a batch of chocolate cookies that didn’t turn out well, and these peanut butter chip cookies are the finest I have ever had. When we were little, my best friend’s mom used to make these. The temptation to consume the entire batch should be noted.

Ingredients

  1. 2 tablespoons vegetable oil, divided
  2. 1 onion, sliced into rings
  3. 1 tablespoon honey
  4. 2 skinless, boneless chicken breast halves – cut into strips
  5. ½ cup barbeque sauce
  6. ½ cup shredded sharp Cheddar cheese
  7. ½ cup shredded Monterey Jack cheese
  8. 8 (10 inch) flour tortillas

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large, deep skillet, heat 1 tablespoon oil over medium high heat. Slowly cook and stir onion until translucent. Mix in honey. Stir until onion is golden brown, about 5 minutes. Remove from skillet and set aside.
  3. Place remaining oil and chicken in the skillet over medium high heat. Cook until chicken is no longer pink. Stir in barbeque sauce and evenly coat chicken.
  4. Layer 4 tortillas individually with chicken, onions, Cheddar cheese and Monterey Jack cheese. Top with remaining tortillas.
  5. One or two at a time, place layered tortillas on a large baking sheet. Bake uncovered in the preheated oven 20 minutes, or until cheese is melted. Do not let tortillas become too crisp. Remove from heat. Cut into quarters to serve.

Delicious! I did change it a bit because I had 2 lbs of leftover chicken. I used 1 whole onion, 1/2 c. BBQ sauce and 8 oz. of various types of cheese. I sweated out the onions in 2 t. oil (I was using a sweetened BBQ sauce so I did not add honey), added the BBQ sauce and heated through. I then placed a tortilla in a dry pan, placed some of the chicken filling in and scattered on some cheese. I flipped when the tortilla was crisp on the bottom. After removing the tortilla, allow 3 minutes resting time so the cheese doesn’t run out. Sooo good!

Easy recipe and tasted great but my tortillas top layer came out dry and crispy and didn’t melt to the cheese. I ended up popping the top tortilla off and folding the whole thing in half.

I love this recipe! I did seasonings: Lawry’s, garlic powder, and black pepper. My oven is on the fritz, so I “fried “ them on the stove In a pan lightly coated with oil and butter and flipped once. Deeeeelicious. Hubby said they were really good.

The bottom of the quesadilla was soggy and the top was crispy. That made a mess when my family tried to eat. Next time I will definitely try the recommendation to pan fry.

Made this twice since saving it a couple weeks ago! I added red and green peppers with the onions. Made some with steak and did a combo with the steak and chicken. Big hit with my Mom and daughter. Will make again and again … especially when we have extra tortilla shells that need to be used up.

I made this recipe several times, it’s a hit! I just put less BBQ sauce (less then half) and replace it with tomato sauce/thick juice. The BBQ sauce gave a strong taste to the meat so next time I put some BBQ sauce, some tomato juice, mix it, taste it, and adjusted to my taste, plus salt and pepper.

This was great! I used Baby Ray’s BBQ sauce. These could’ve used a bit more filling, but wouldn’t change them. The only thing else I might do differently is pan fry the tortillas instead of baking them, but this way certainly is healthier…Made this again and pan fried them. Too much work for the amount of mouths to feed here, but worth it if it’s for two people or so. I used a different BBQ sauce from Wegmans and really disliked it, so the sauce makes a huge difference.

Good stuff! Such a simple recipe and so delicious! I made a double batch and did the first batch with Sweet Baby Ray’s Chipotle BBQ and the second with their Honey BBQ. Both were delicious, but the Chipotle was the perfect match. I used Quesadilla cheese and added black beans, green onion, and fresh cilantro and the flavor combination was spectacular! Thank you for an awesome recipe!

I really loved these. Cooked 2 for me, but only ate 1. Leftover reheated beautifully next day. Super easy. My husband ate it, but said it wasn’t his favorite. He is not a big bbq or Mexican food lover anyway. Easy weeknight dinner.

This recipe turned out really great. I used kraft barbecue sauce, and I think I could go with a more full bodied barbecue sauce like Williamson Brothers. I cooked my chicken in the crock pot so it could be shredded, and it just fell apart while mixing in with the onions. I still fried it on the stove, but I would like to try baking it next time. I will definitely try this again instead of always making quesadillas with taco seasoning.
