Ingredients

  1. 3 slices thick-cut bacon, chopped
  2. 1 cup sliced celery
  3. 4 scallions, chopped
  4. 3/4 teaspoon chili powder
  5. 1/2 teaspoon kosher salt
  6. 1-pound package frozen black-eyed peas, thawed
  7. Chopped parsley, for garnish

Instructions

  1. Cook the bacon in a skillet over medium-high heat. Add the celery, scallions, chili powder and salt. Cook, stirring, 4 minutes. Add the black-eyed peas and 3/4 cup water. Reduce the heat to medium and warm through, 5 minutes. Top with the chopped parsley.
