Tex-Mex Fried Rice

Ingredients

  1. 2 tablespoons vegetable oil
  2. 1 pound spicy sausage meat
  3. 1 1/2 cups frozen yellow corn kernels
  4. 1 onion, finely chopped
  5. 1 red bell pepper, finely chopped
  6. 1 jalapeno, finely chopped
  7. 1 teaspoon chili powder
  8. Pinch kosher salt
  9. Pinch red pepper flakes
  10. Freshly ground black pepper
  11. 4 cups leftover cooked rice
  12. 1 tablespoon Worcestershire sauce
  13. 1 tablespoon hot sauce, or more to taste
  14. Zest and juice of 1 lime
  15. 4 scallions, sliced
  16. 1/2 bunch fresh cilantro, chopped

Instructions

  1. Heat the oil in a large skillet and brown the sausage meat, breaking it up into small pieces. When starting to brown, add the frozen corn (no need to thaw), onions, bell peppers and jalapenos. Season with the chili powder, salt, red pepper flakes and plenty of black pepper. Cook until the vegetables are crisp-tender.
  2. Add the rice and stir-fry until heated through and coated with the vegetable mixture. Add the Worcestershire sauce, hot sauce and lime zest and juice. Stir-fry until the rice is just starting to brown. Add the scallions and stir well so that they are thoroughly mixed in. Serve and garnish with cilantro.

Loved this dish. Used sriracha instead of hot sauce. I had no lime but added lime juice. No fresh cilantro so I added a little dried. Keeper!

I really enjoyed this recipe. Easy, quick and a working parent joy. The flavor good and SPICY!!
For me the spice was addicting but for the rest of the family I received complaints. Next time I’ll add a dollop of sour cream to the top to cool those young taste buds down. Maybe leave the jalapeño out to.

I really get upset when someone gives a recipe a poor rating, due to their personal preferences. For example, someone who dislikes bleu cheese, or arugula, and puts it in the recipe anyway, then gives it a 3 instead of a five, because they don’t like bleu cheese or arugula. With that said, I had mixed feelings on this one. Flavor was a 5, for sure. Fried Rice???? a 3 at best. As a meal, 3 at best. As a dip with tortilla chips and some melted cheese, a 5 plus. To each their own, but flavor is there.

I used hamburger & cilantro-lime rice-a-roni. I also added a can of dark red kidney beans. It came out really good!!! This one is a keeper.

I ended up replacing sausage meet with cut up chicken sausages and some left-over chicken meet from a rotisserie chicken – and it still came out great! Very versatile recipe – thank you for sharing!
