Teriyaki Chicken with Mushrooms and Broccoli

With a side of steamed rice, quick and simple (and just one-pot) teriyaki chicken with mushrooms and broccoli is the ideal weekday meal.

Ingredients

  1. ½ cup soy sauce
  2. ½ cup rice vinegar
  3. 3 tablespoons honey
  4. 2 teaspoons sesame oil
  5. 4 teaspoons fresh ginger, minced
  6. 4 teaspoons cornstarch
  7. 4 cloves garlic, minced
  8. 1 tablespoon olive oil
  9. 2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  10. 1 pound broccoli florets, chopped into bite-sized pieces
  11. 1 (8 ounce) package sliced mushrooms

Instructions

  1. Mix all the sauce ingredients in a medium size bowl until completely smooth.
  2. Add the olive oil to the bottom of a fry pan and heat to medium high. Add the cut-up chicken and cook until the chicken is golden brown and almost cooked through, about 10 minutes.
  3. Add the sauce to the chicken and toss until all the chicken is coated. Add the broccoli floret pieces and sliced mushrooms to the chicken mixture; stir until coated. Let the chicken and veggie mixture simmer for about 10 minutes.
  4. You can use either chicken breasts or tenders in this recipe.

As much as I love Rice Vinegar, I agree it was a tad too much. Otherwise flavor was good. I normally don’t follow a recipe but glad I did to discover a twist on my usual.

Tastes great with a few modifications. I recommend adding toasted sesame seeds per the main photo. I also added scallions for authenticity. A lot of the comments mentioned that the teriyaki is so-so. I added 4 tsp of brown sugar and it came out perfect.

I make stir try Every once in awhile but have never made chicken terriachy spel? Before. I have a good friend in rehab and love making him homemade suppers. So tonight this is what he had. He says he loved it. I thought it was very good. Thanks for your recipe. i will use it again. P.s. Didn’t change but one little thing. I like lemongrass so put in some of that.
