Ingredients

  1. ¾ cup mayonnaise
  2. ½ cup grated Parmesan cheese
  3. ¾ teaspoon garlic powder
  4. ¾ cup Italian seasoned bread crumbs
  5. 4 skinless, boneless chicken breast halves

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C).
  2. Mix mayonnaise, Parmesan cheese, and garlic powder together in a bowl. Place bread crumbs in a separate bowl. Dip each chicken breast into the mayonnaise mixture, then into the bread crumbs to coat. Arrange breaded chicken on a baking sheet.
  3. Bake in the preheated oven until chicken is no longer pink in the center and the coating is golden brown, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Super-delicious! I don’t get how you can “dip” the chicken into the mayo mixture though – I had to spread it over the chicken and then pop it into the breadcrumbs. So so good!

Followed the recipe but did not have garlic powder so I used real garlic and I used Ruskoline bread crumbs because that what I had in the cupboard and it turned out very good. Family loved it..

The recipe works just as it is written, I do not like Mayo, but forged ahead anyway, and was plesantly suprised that there wasn’t any “Mayo” taste, and the chicken was great. Thank you for sharing

was so good! i added some olive garden itialian dressing into my mayo.. it got a little watery for my liking so i added some sour cream, it was so good!

Delicious! I followed some of the suggestions (increase the garlic powder in the mayo mix; add some Italian seasoning and freshly ground black pepper to the breadcrumb mixture). Good ideas. A few suggestions: – pound the cutlets to an even thickness – pat cutlets dry w/ paper towels before dipping in mayo mixture, and – cut the mayo mix by about 1/3. The recipe calls for much more than you’ll need, imo. Lots of compliments!

Read reviews and made the following changes and it turned out great – family loved it. Used boneless, skinless chicken thighs since that is what we had on hand. My family is not a fan of mayonnaise, so used sour cream instead and added a beaten egg, garlic powder, oregano and basil along with the parmesan. Used a mix of panko bread crumbs and regular Italian blend bread crumbs, but neither got browned that much in the oven. Cooked at 375 instead of 425 (too high for thin chicken) to make sure it didn’t dry out and cooked for 35 minutes. I think adding the egg helped to keep the mixture with the bread crumbs attached to to the chicken. Some came off the bottom when removing from the cooking rack but not much. All in all, I will definitely make again and probably try turning halfway through the cooking to ensure browning on both sides.

This is a fantastic dinner. I honestly don’t understand some people who change the ingredients and then complain about some of the ingredients. You either like it the way the recipe calls for or if you are going to pick apart some of the ingredients then move on to a different recipe. Looking forward to trying more of your recipes yummy thanks

The chicken was very moist and I loved the crunchy texture. I did find that it needed more flavor. I did add onion powder and pepper to the mayo mix. Next time I will add parmesan cheese, garlic powder and oregano to the bread crumbs.

Delicious! I cut chicken breasts into strips and put them in a salt water brine for about 20 minutes first. The chicken strips were crunch on the outside and moist inside. Yum!
