With four kids, the cost of the store-bought package of seasoned fries, which my family adores, has increased. So I gave batter a go; after all, it works for making crispy chicken, shrimp, and onion rings, so why not potatoes? These fries are now so popular that even my spouse can’t get enough. Even after being reheated in the microwave, they retain their crispiness.

Ingredients
- 1 cup flour
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 3 pounds cubed beef stew meat
- ¼ cup vegetable oil
- 1 onion, minced
- 4 cups beef broth
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 2 bay leaves
- salt and ground black pepper to taste
- 3 large potatoes, peeled and cubed
- 4 carrots, peeled and chopped
- 4 stalks celery, chopped
- 2 teaspoons cornstarch
- 2 teaspoons cold water
- 1 cup frozen peas
Instructions
- Combine the flour, garlic powder, 1 teaspoon salt, and 1 teaspoon pepper in a resealable plastic bag. Place the beef in the bag and shake to coat.
- Heat the oil in a large stockpot over medium heat; brown the beef in the hot oil and remove to a plate lined with paper towels. Add the onion to the remaining oil and cook until browned. Pour the beef broth into the stockpot. Stir in the rosemary, thyme, and bay leaves. Season with salt and pepper. Return the beef to the pot. Bring the mixture to a boil; reduce heat to low, cover, and simmer 1 hour.
- Add the potatoes, carrots, and celery to the pot. Whisk together the cornstarch and cold water in a small bowl and mix into the stew. Cover and simmer 45 minutes more. Stir in the frozen peas and cook another 15 minutes.

I enjoyed this stew; it had a nice depth of flavor. It is very beefy (1/2 pound meat per serving!), so you can even add more veggies to stretch it out. I made it exactly as written, except when I went to add the peas, I realized by bag of frozen peas was really frozen broccoli, so I just left them out. Just by looking at the ingredients, I could tell there wasn’t going to be enough liquid. I started out with the stated 4 cups of broth, but after simmering the meat, and upon adding the veggies, I had to add another 2 cups of broth to even cover the veggies. Make sure you stir it every so often, as it has a tendency to stick to the bottom of the pot. Makes 6 hearty portions.
Really good. Needed to add more liquid then the recipe called for and left out the peas. Turned out great!
To make this gluten free I replaced the flour with ultra fine rice flour. Instead of broth ( I must avoid glutamic acid) I used just two cups of water instead. Rather than potatoes I used white Japanese sweet potato. For the herbs I used herbs de province. I loved this.

Same as mom’s. Make sure to brown the beef in batches and add oil as you need to. Also, add the flour left overs just after the onion is soft and that will thicken it up nicely
AWESOME! This is a very traditional, stick to your ribs kind of stew! Stayed true to the recipe. I did end up using less broth, so that the consistency could be what I wanted without needing the cornstarch. Cooked in a slow cooker for 6 hours on low. It was totally delicious. My husband loved it and said, “make this again”. This also would be easy to freeze. Thank METAXA313 for this wonderful recipe! YUM!

Love this one! I use fresh herbs from my garden rather than the dried and I use fresh sliced mushrooms instead of peas. It is by far the best, heartiest beef stew I’ve ever made. Bravo!

I’m a college student living with three other guys and four girls. Between classes and work, we barely have time to cook good meals. But this stew is easy to make, it doesn’t take too long, and it’s always a hit! I usually double the recipe and add a pound of bacon coated in brown sugar. It does our family well. This recipe was interesting and tasty. When we saw the picture i thought that my children wouldn’t like it but. It turned out great and lasted a long time. It was great proportion for your family to reheat.
It was both easy to prepare and a excellent stew. I did substitute venison for the beef since deer season had been kind to me. Since I have no small kids I also added a bit of Worstchestire and Texas Pete, to taste. I also didn’t have any frozen peas but found a regular can of baby peas works well.

This is a great basic stew recipe! The other day i didnt have beef broth or beef stew meat so i substituted chicken broth and pork meat and it was great! Kind of like chicken pot pie without the crust!
Made exactly as directed…I assume you meant English peas..thats what i used…anyway..next time I will use a little more carrots and potatoes…and about 2 more cups of beef broth along with 1 cup of vegetable broth..very good starting point.
