Tarragon and Merlot Truffles

Ingredients

  1. 1/3 cup heavy cream
  2. One 12-ounce bag semisweet chocolate chips
  3. 1/3 cup chopped fresh tarragon
  4. 3 tablespoons merlot wine
  5. 1/8 teaspoon fine sea salt
  6. 1/2 cup unsweetened cocoa powder

Instructions

  1. Line a baking sheet with parchment paper. Set aside. 
  2. Place the cream and chocolate in a medium bowl and place over a pan of barely-simmering water. Stir until the chocolate has melted and the mixture is smooth, about 6 minutes. Stir in the tarragon, wine and salt until smooth. Refrigerate for 2 hours until firm. 
  3. Let the mixture stand at room temperature until moldable, about 45 minutes. Using a melon scoop, scoop level amounts of the truffle mixture onto the prepared baking sheet. Roll into 1/2-inch balls. 
  4. Place the cocoa powder in a small bowl. Roll the truffles in the cocoa powder until coated. Arrange on a platter and serve, or refrigerate in an airtight container.

I had some tarragon in my garden that I wanted to use up, so I searched for recipes on Food Network, and found this. I was skeptical, but they are delicious! They are truffles for adults, not too sweet, with an interesting fennel undertone from the tarragon. I scooped them with a 1 tablespoon portion scoop and made 23 truffles.

These truffles were part of my Valentine’s gift to my husband. He loves tarragon and I’ve wanted to taste this unique combination of flavors since the episode aired. I always trust Giada’s recipes, they are well tested and I love the ingredients she favors. They were a perfect, gourmet indulgence! The chocolate, tarragon and merlot make a very tasty combination. The truffle mixture was easy super easy to make, but I didn’t have a melon scoop so rolling with your hands gets very messy and it is difficult to keep the mixture from getting to warm. I didn’t roll them all rolled so I am going to get a melon scoop and try again. The flavor is definitely worth it!

Being a chocolate truffle fan I was excited to try. I think they are o.k. They are very rich. You will definitely want to use a melon scoop. I didn’t have one so I used my hands and that gets messy quick!
