Ingredients
- 1 (13.5 ounce) can pineapple chunks, drained (juice reserved)
- 1 cup water
- ½ cup brown sugar
- 2 tablespoons vinegar
- 2 tablespoons cornstarch
- 2 green bell peppers, chopped
- 1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), chopped
Instructions
- Combine juice from canned pineapple, water, brown sugar, vinegar, and cornstarch in a saucepan; bring to a boil and cook, stirring constantly, until sauce is thickened and you notice a change in color, about 5 minutes.
- Stir pineapple chunks, green bell pepper, and luncheon meat into sauce and simmer until heated through, about 10 minutes.

I really like this. I’m always looking for shelf stable recipes, and this is a good one.
Im at the end of the month budget wise, and food wise, lol. I always have several cans of spam on hand for emergencies, though I have literally never eaten it in my life. I figured this was a good time to give it a try. The pineapples kind of helped me decide. Anyway, to my great surprise it came out really great. I had to use a frozen mix of red and green peppers, but otherwise followed the recipe. My son loved it! I don’t really eat meat..Not for any reason other than I don’t like the texture of most meat, lol. But I do taste it, and this actually was very good. I made broccoli sauteed with butter and garlic, a touch of olive oil on the side. All in all it came out great and was super easy.
It was a very good way to have the spam taste less salty. My Whole family loved it and my picky eater went back for seconds 🙂
