Arroz with leche is a custard-like delicacy made with sweet rice. This classic rice pudding from Mexico is a favorite among all. Perhaps you should double the recipe!

Ingredients

  1. 2 cups water
  2. 1 cup uncooked long-grain white rice
  3. 2 tablespoons unsalted butter
  4. 3 cups whole milk, divided
  5. ⅓ cup white sugar
  6. 1 large egg
  7. 1 tablespoon all-purpose flour
  8. 1 ½ teaspoons vanilla extract
  9. ⅔ cup heavy cream
  10. ½ cup raisins (Optional)
  11. ½ teaspoon ground cinnamon

Instructions

  1. Bring water, rice, and butter to a boil in a large saucepan over high heat. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid is absorbed, 20 to 25 minutes.
  2. Whisk together 2 cups milk, sugar, egg, flour, and vanilla in a bowl; pour over cooked rice in the saucepan and stir to combine. Bring to a simmer over low heat and cook, stirring occasionally, for 15 minutes.
  3. Stir in remaining 1 cup milk, cream, raisins, and cinnamon until thoroughly mixed. Let cool for a few minutes. Serve warm or cold.

It turned out pretty well and made quite a large amount. I did not have any heavy cream on hand at the time and I added some condensed milk to the recipe, but it still turned out nicely. I also simmered a bit longer to thicken the consistency.

I did not use flour or heavy cream or raisins and I used park water and part milk in the cooking process in the beginning.

This recipe is great! I did make 1 change and by doing so, my pudding was thick and delicious. Instead of using long-grain white rice, I used Sweet rice (often used to make sticky rice). Looks like long-grain white rice and when cooked tastes like it too…just in a thicker consistency. Perfect for this recipe if you want a thicker overall consistency.

I used leftover rice from dinner. I subbed sweetened condensed milk for 1 cup of milk and the sugar. It came out perfect!

This recipe is the closest thing to my grandmas arroz con leche that’s I’ve found! The only thing I changed is I added a cinnamon stick in as well! That made it taste just like my grandmas! Just a side note to everyone talking about the consistency, this is a Spanish version of rice pudding, it is not meant to be thick. It’s meant to be soupy. The consistency is exactly what it’s supposed to be!

I also followed majority of these ingredients. I used La Lechera for one of the cups of whole milk, an made my “heavy cream” from scratch.. It was my first time ever making arroz con leche.. An everyone loved it.. So Thank you! Oh an i saved the left over juice, an now i have horchata too. Hehe

It did not have enough water and then not enough milk when cooking. When it was done it didn’t have the custard texture and it was not sweet enough or have enough flavor. I won’t make it again.

Sweet Rice and Raisins. I added additional real vanilla extract and additional raisins (my husband likes it this way). Doing this gave pudding a bit darker color. I also add the raisins earlier into the simmering rice to plump raisins up a bit (if you do this add a bit more water when boiling rice to account for raisins to swell). Like this reciepe a great deal, easy to make. Use whole milk and cream to make it very rich and pudding like.

This was a great recipe. Like so many others before me, I also used the sweetened condensed milk and omitted the sugar and heavy cream. The second time I made this, I made a little change to the raisins to give it a little more flavor. I boiled a half of a cup of brandy and added the raisins to reconstitute them. Removed them from the brandy then mixed them into the pudding.
