Sweet Potato Souffle

Ingredients

  1. 3 large sweet potatoes cooked and whipped
  2. 1 cup sugar
  3. 2 eggs beaten
  4. 1/2 teaspoon salt
  5. 1 stick butter
  6. 1/2 cup evaporated milk
  7. 2 teaspoons vanilla
  8. 1 bag marshmallows
  9. 1/2 cup chopped pecans

Instructions

  1. Peel and cook potatoes until tender. Drain potatoes and whip. Add sugar, eggs, salt, butter, milk and vanilla. Mix well and put in a greased 1 1/2 quart casserole. Bake in a preheated 325 degree oven for 25 minutes. Place marshmallows and pecans on top and return to oven for about 5 minutes or until brown on top.

Great side dish for Thanksgiving and Christmas. The only change I made was to substitute brown sugar for regular sugar to add more flavor.

Made this for thanksgiving today…huge hit!! I cooked and mashed the potatoes the night before to save time. I used 1/2 cup brown sugar and 1tsp of vanilla instead of white sugar and 2tsp vanilla. Plenty sweet. I did have to cook an additional 20 minutes (yes, 20!) to get marshmallows toasted but soufflés was fine.

I made this for Thanksgiving and my mom asked for it again for Easter. I used mini marshmallows and some Peeps on top. Was very festive for Easter LOL. The eyes on the Peeps melted so I just took a toothpick and some gel icing and dotted them some new eyes. I did make a larger recipe and I used 2- 40 oz cans of sweet potatoes, brown sugar, and 3 eggs, but everything else (butter, vanilla, milk) was the same. Everyone loved them.

A few years back, I was assigned the sweet potatoes at Thanksgiving. I don’t cook. I googled for a recipe and this was the first that came up. It looked easy enough, so I made it. Now, it’s the bane of my existence. I have to make it at every family gathering. They LOVE it. I’m writing this now as I look the recipe up again to make it for Easter. EASTER! Sigh…it’s a hit and very easy to make.
