Sweet Chili Asian Meatballs

Ingredients

  1. 1 slice white bread
  2. 1/2 cup whole milk
  3. 1/2 pound ground pork
  4. 1/2 pound ground lamb
  5. 1/2 pound ground bison
  6. 3 garlic cloves, chopped
  7. 1 tablespoon peeled and finely grated fresh ginger
  8. 2 serrano peppers, chopped
  9. 2 shallots, chopped
  10. 1/2 tablespoon fish sauce
  11. 1 tablespoon soy sauce
  12. 1/2 teaspoon plum vinegar
  13. 1/2 teaspoon mirin
  14. 1 lime, juiced
  15. 1/2 cup chopped fresh cilantro leaves
  16. Kosher salt and freshly ground black pepper
  17. 1 egg
  18. 3 to 4 tablespoons olive oil
  19. 1 jar sweet chili sauce
  20. 1/2 cup panko crumbs, toasted
  21. 3 tablespoons chopped crystallized ginger

Instructions

  1. Soak the slice of bread in the milk in a small bowl.
  2. Mix the ground meats, soaked bread, and all remaining ingredients, up to the olive oil, until well combined.
  3. Roll the meat mixture into walnut-sized balls. In a large saute pan, over medium-high heat, heat the olive oil and sear the meatballs. If you can’t fit them all in the pan at once, cook in batches. Sear into golden brown, about 8 to 10 minutes. Cool slightly.
  4. In a small saucepan, heat the chili sauce over low heat.
  5. Stick a toothpick or skewer into each meatball, then dip them into the sauce. Roll the tips in toasted panko and crystallized ginger and serve.

This was a hit though there are so many ingredients. I made this for me and two friends and the flavors were full of depth. Kick*****job!

I served this dish at a neighborhood gathering. It was a BIG hit; everyone loved it. Even my daughter – who didn’t think ‘meatballs’ was a very ‘Asian’ dish – loved it. The spices are so complex and wonderful. These tasty morsels melt in your mouth. Will definitely make this again! Thank you!

Pedestrian is not a word to use with these “meatballs”. Complex, interesting; a wonderful hors d’oeuvre. Can’t wait to try other Brianna recipes. Only had aout 3/4 lbb of ground beef on hand, didn’t change the proportions since Iike alot of flavor and they turned out really well. Mixed all the ingredients in the food processor first then folded them into the meat. I broiled instead of sauteeing. Bravo!
