Ingredients

  1. 1 (20 ounce) can pineapple chunks, juice reserved
  2. ¼ cup soy sauce
  3. ½ cup vinegar
  4. ¾ cup brown sugar
  5. ¼ cup all-purpose flour
  6. 1 ½ green bell peppers, diced
  7. 1 cup chopped celery
  8. 1 (8 ounce) can water chestnuts, drained and sliced
  9. 1 ½ pounds cooked chicken meat, cut into strips

Instructions

  1. In a large saucepan over medium-low heat, blend reserved pineapple juice, soy sauce, vinegar, and brown sugar. Mix in flour, and stir until thickened.
  2. Stir bell peppers, celery, and water chestnuts into the saucepan. Mix in chicken. Cook and stir until heated through. Stir in the pineapple chunks before serving.

I used fresh broccoli in place of the water chestnuts because my husband doesn’t like them I steamed them for 2 minutes first. My prep time was quite a bit longer since I had to cut up everything, but it was worth the wait!

Way too much vinegar for our tastes. Next time I’ll use less. I also added ketchup and more brown sugar to try to help the strong vinegar taste.

I used the original recipe. It is very sweet but I loved it. I used rice vinegar. I also cooked my chicken in sesame seed oil then added the peppers and celery and cooked them. I’ll definitely make this again because it was so quick and easy.

I will use less brown sugar next time as it was a little too sweet for our liking. Also, we used broccoli instead of celery as that is what we had in the fridge. Hubby says make again so that means it was good!

Very good! Loved how easy it was. Fried chicken in the skillet. Used corn starch instead of flour. Added green onion instead of the water chestnuts (my husband hates them). Served over rice. Keeper!!

Excellent recipe, though a little too sweet for my personal palate. I used a real pineapple rather than canned, so I had to guess at the amount of juice, but it made for a fantastic presentation. I’ll probably use less sugar next time, though.

Simple recipe, I had more than 1lb of chicken, so I altered the recipe. I prefer to use fresh pineapple, we let it ripen, cut up & get juice. Added a shake or two of soy sauce, lots more fresh pineapple. Yum, will make again. Great starter recipe to develop & make your own??

This was awesome. I also used cornstarch for thickening, and substituted gluten free soya sauce, sauce was nice and smooth. I didn’t have peppers or water chestnuts so I used sliced carrot and onion. Also when I added the pineapple I also added grapes tomatoes that we halved. Served over white long grain rice. It was quick and easy,tasted great and was very filling. Will be making this again for sure.

I used potato starch instead of flour…maybe use a very small amount next time, I used 1/4 cup and as soon as I whipped it in the whole sauce turned to a thick gooey solid! Had to add a lot of water to fix that and therefore cook the veggies and chicken separately. Still, it turned out delicious!

I used some veggies/peppers I had already diced, and it turned out very well. A bit to sweet for me, so next time I won’t add sugar…thinking just the pineapple with juice will be enough.
