Sweet and Salty Pepitas

Ingredients

  1. Vegetable oil, for the baking sheet
  2. 2 tablespoons unsalted butter
  3. 2 1/2 cups fresh pumpkin seeds (pepitas), cleaned of any large chunks of pumpkin, but some pulp is okay
  4. 2 tablespoons sugar
  5. 1/2 teaspoon ground cinnamon
  6. 1/2 teaspoon ground ginger
  7. 1/4 teaspoon ground allspice
  8. 1/4 teaspoon ground cloves
  9. Kosher salt

Instructions

  1. Preheat the oven to 400 degrees F. Line a rimmed baking sheet with foil and lightly oil the foil.
  2. Melt the butter in a saute pan over medium heat. Add the pepitas, toss to coat in the butter and then add the sugar, cinnamon, ginger, allspice, cloves and 1 teaspoon salt. Spread the pepitas on the prepared baking sheet in 1 layer and bake, stirring once or twice, until golden brown all over, 12 to 15 minutes. Let cool completely.

Badly written recipe. Try putting pepitas in a 400 degree oven for 15 minutes. What’s the result? Little charred blobs of carbon. Obviously, NEVER TESTED.

These are fabulous!  Cooked them for about 15 minutes at 350 degrees.  Also cooked them on parchment paper and added salt the minute they came out of the oven.  Delicious!

Good for eating out of hand and also good on salads and sandwiches. I roasted at 400° but for a much shorter time.

FANTASTIC! Made several batches already. Added a pinch of nutmeg and used Cloves Gone Wild salt and Bourbon Vanilla salt from company called Saltopia, awesome all natural flavor infused salts! Everyone asking for more so bought all the raw pumpkin  seeds I could find in store and making Christmas treat bags for everyone! Love this recipe.

I was looking so forward to making these.  I followed the recipe exactly and stirred after 5 mins.  But, at 400 degrees, they burned horribly.  I may try them again only because when I stirred all the ingredients together it smelled delightful.  But, if I do, I’ll cook them at 275.  Way too high temp.  Very disappointed.  They were a total loss/waste.

I made this twice the day I saw this episode air.  I also doubled the recipe both times.  This is great for cleaning out the freezer with odds and ends nuts and seeds.  When cooled completely I stirred in leftover dried fruits and baking chips.  Now I am ready to start my holiday baking with fresh ingredients. I think this snack mix would make great stocking stuffers.  Thanks Valerie!
