Swedish Crisp Waffles (Frasvafflor)

In Sweden, waffles are a highly common street food and coffee shop staple. Additionally, we only eat them on the Feast of the Annunciation since “Vrfrudagen” (Lady Day), which is Swedish for “vffeldagen,” sounds very similar to “vffeldagen” and became Waffle Day. These lack eggs and are more crispier and lighter than American and Belgian waffles. Serve right away with whipped cream, jam, and fresh fruit.

Ingredients

  1. 2 cups all-purpose flour
  2. 1 tablespoon white sugar
  3. 1 teaspoon salt
  4. 1 teaspoon baking powder
  5. 1 ¼ cups milk
  6. ½ cup unsalted butter, melted and cooled
  7. ½ cup heavy cream
  8. ½ cup lemon-lime flavored carbonated beverage

Instructions

  1. Preheat a waffle iron according to manufacturer’s instructions.
  2. Sift flour, sugar, salt, and baking powder together in a bowl. Whisk in milk, butter, and heavy cream; stir in soda.
  3. Cook in batches in the preheated waffle iron until waffles are golden brown and the iron stops steaming, about 5 minutes.
  4. Use any clear, mild soda for this.

I love crispy waffles and these stayed crispy on my plate, even with butter and syrup on them.

LORDT, these waffles were so light! The quality of your waffle iron is going to make some difference here, but even considering the cheapo one I was using, these waffles were still crispy and fluffy. I was a bit concerned about using the sweet lemon lime soda as opposed to sparkling water, but the taste of the waffles still ended up being very lightly sweet. I really could just eat a fresh one by itself straight off the waffle maker. This recipe made exactly 8 average-sized square waffles with my iron. Despite how light they are, they’re very filling. The husband and two boys kept repeating how amazing these waffles were! I preheated my oven to 215 F and let it reach temp with a sheet pan and cookie rack inside, and as I made the waffles I would place them on top of the cookie rack to keep warm while I worked on the rest of the waffles.

Made as instructed. Good and crisp. Delicious with syrup. BUT we love them with powdered sugar then a scoop of vanilla or pralines and cream ice cream, whipped cream and hot syrup. Makes a great breakfast with grandkids!!!!!

Made as instructed. Was very tasty without anything on it and was crisp and light. I topped it with homemade blueberry sauce and fresh whipped cream. This is a keeper in my book!
