Ingredients

  1. 6 eggs, beaten
  2. 1 cup milk
  3. ½ teaspoon salt
  4. ⅛ teaspoon ground black pepper
  5. cooking spray
  6. 3 slices bread, torn in pieces
  7. 1 (12 ounce) package cooked breakfast sausage
  8. ½ cup Monterey Jack cheese
  9. ½ cup shredded Cheddar cheese

Instructions

  1. Whisk eggs, milk, salt, and black pepper together in a bowl.
  2. Spray a 2-quart baking dish with cooking spray. Spread bread pieces out in an even layer on the bottom of the prepared dish; top with sausage, Monterey Jack cheese, egg mixture, and Cheddar cheese, respectively. Cover the baking dish with plastic wrap and refrigerate, 8 hours to overnight.
  3. Preheat oven to 325 degrees F (165 degrees C). Remove casserole from refrigerator and let sit at room temperature for 15 minutes.
  4. Bake casserole in the preheated oven until bubbling and hot throughout, about 45 minutes.

Awesome with some hot sauce, otherwise a bit too bland for my taste. I did use an Italian moose sausage, but even a hotter sausage would perk it up a bit.

Love how easy and versatile this recipe is. I used leftover dinner biscuits instead of sliced bread, a vegan apple maple flavored sausage and chopped up a green bell pepper and it came out great. Thanks!

Baked it this morning and let me tell ya! The whole family loved it! 🙂 Thank you for a good recipe that’s for keeps. I didn’t have sausage but I had bacon pieces so I used those and fiesta blend cheese for the whole thing. I used bolillo rolls for the bread and next time it has to be in a 9×13 instead of a 2 qt. cause we didn’t have enough for everybody lol! Good thing I served some cantaloupe chunks to go with it otherwise we’d be squabbling over who gets the last piece lol!!!

We loved it!!! Made it the night before, so all I had to do was take it out the next morning and bake it. Served with mixed fruit and grits, this was a great company breakfast.

I was looking for a quick, easy breakfast casserole for Christmas morning (on Christmas morning!) that didn’t have potatoes in it. This recipe was fantastic and just what I was looking for. My family went nuts over it and wants me to make it again this weekend! I made a couple small changes. I used 10 eggs because there were 4 adults eating and then added ¼ tsp more salt and pepper. I also used taco cheese and added another 1/2 cup. I also put the bread slices in the bottom and poured the mixture on top instead of tearing the bread into pieces. Cooked it for about 45-50 minutes. Will make again!!

I doubled it and put it an 11×13 pan. Used one 8oz bag of cheddar jack cheese. I like how it filled the casserole using the bread and the sausage. Keeper.

This recipe turned out really great. Based on other reviews, I added more bread, 2 extra eggs and a little bit more milk. I also added a tsp of ground mustard and some minced onions.

Put Simply Potatoes O’Brien shredded potatoes instead of bread, 1 3/4 milk, 6 eggs, Added drained diced green chilies to give it some flavor, package of Jimmy Dean cooked sausage crumbles & Mexican blend cheese. Put in Le Creuset braiser sprayed with cooking spray. Baked at 325 convection 55 min. Served with salsa.

I doubled the recipe because there were 5 adults eating, and used a dutch oven to make it in because it’s all I had at our lake house. It was fabulous …. crispy around the edges and cheesy deliciousness on top!! One thing to keep in mind if you double the recipe is to double (almost) the cook time as well!!

This was a definite hit! I took one reviewer’s advice and used cubes French bread, but I used a half loaf which must have been a bit too much. So I added another 3 eggs and 1/2 c. milk so that it wasn’t too dry. The only time saver I tried and was pleased was to use pre-cooked patty sausage and cut it into 1/4s. Saved time and made for easy clean up.
