Ingredients
- 6 eggs, whisked
- 1 cup shredded Cheddar cheese
- 6 slices bacon, diced
- 2 slices bread, cubed
- ⅓ red bell pepper, diced
- 2 green onions, chopped
- 3 tablespoons milk
- ½ teaspoon minced garlic, or to taste (Optional)
- salt and ground black pepper to taste
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking dish.
- Mix eggs, cheese, bacon, bread, red bell pepper, green onion, milk, garlic, salt, and black pepper together in a bowl until well-combined; pour into the prepared baking dish.
- Bake in the preheated oven until eggs are set, about 20 to 25 minutes.
- You can use almond milk instead of regular milk and any cheese instead of Cheddar.

I liked it, but would change it adding sour cream, heavy cream, it was a bit dry. I think sausage would help make it even more flavorful. Using hashbrown patties would thicken the recipe.
Used a smaller pan, replaced the bacon with sausage patty, prepared, chopped and then added to the base mixture. Added heavy cream 4 tablespoons instead of milk.
So tasty and easy. Hubby loved it. I like that I can throw most anything I want to clear out of the refrigerator in it.

This is very user-friendly–no need to be the world’s most amazing chef. I made this in a 9″ square pan, which worked out really well. I think that the larger pan would make the bake too thin and rubbery. I cooked the bacon (I put in more bacon than the recipe suggested, because…bacon!)–I actually overcooked it in the microwave, but that was fine, because the moisture from the eggs made it flavorful and chewy. I didn’t have green onions so I just used a bit of regular onion–worked just fine. The touch of garlic is great–not overwhelming at all. This one’s going to be a regular at our house–thank you!
It was easy to make and you can substitute it with any kind of meat and cheese. Just enough for three adults or 2 adults and two grandkids. Little granddaughters loved it. Thanks for the recipe. A &D
I added rice wine vinegar to soy sauce and Chinese 5 spice seasoning. Used a bag of mixed cruciferous veggies and carrots

Turned out perfect in a small baking dish! Used garlic powder, onion powder and cubed ham. Baking time approximately 30 minutes.
This was very easy + flavorful. I used what I had like regular onion + green pepper + store bought real baconbits. It’s great recipe for substituting what you have on hand. I’m going to try using cinnamon bread next time for different flavor. Easy + yummy ! (It would need to be doubled for 9×13 dish…I suggest using a smaller casserole dish than 9×13)
Amazing and super easy! I didn’t cook the bacon beforehand and was worried when reading reviews.. I just chopped into small pieces..but it turned out YUMMY! This will be a staple in our house. Can substitute so many veggies and make enough for a crowd if needed. LOVE!!
I liked that this didn’t call for potatoes, sausage, or an overnight stay in the fridge. It is good, but not enough volume to fill a 9×13. You’d need to double for that. I believe the bacon needs to be cooked, sobI cooked mine first. I didn’t have green onion, so sautéed regular and the bell pepper in the bacon grease. Put it in an 8×11 dish and baked for 28 minutes.
Excellent! I did trade out the onion and peppers for a mild pico in order to save a little time.
This was very good. I’ve made a lot of breakfast casseroles and I’m not sure that the bread in this one had any wow factor (couldn’t really taste it). I made as per the recipe but used a small yellow onion instead of green, which I fried first and, as others suggested, a thin layer of frozen hash browns along the bottom of the pan, which I put in the oven while it was preheating and I was mixing the other ingredients. And, of course, I cooked the bacon first. Was this good? Yes! Would I make it again or serve to company? Yes! Was it amazing? No. There’s a few other breakfast casseroles that rank higher.
First, I fried the bacon until crispy before adding. Same with green peppers and green onions. Half a teaspoon of raw garlic in the egss was way too much and overpowered everything else. Garlic is good for this recipe, but I’d reduce it to 1/3 tsp and fry it with the bacon and green peppers instead. So, the recipe as it stands is pretty bad, but it can be fixed easily enough.
This sounded great! I wish I had read the reviews before I made it. The bacon should be cooked ahead then added. I halved the recipe and put it in a small casserole dish which made it much thicker, which was nice. Maybe add a little more onion.
Great recipe! I added hash browns on the bottom of the dish and then poured the egg mixture over it – baked it and enjoyed!
It was very yummy and easy! The only alterations I made was, I used dark rye, seedy bread and a fiesta cheese blend. To my surprise it came out perfect. You could easily use a smaller pan and adjust the baking time.
I doubled the recipe and it was a hit!!
