Sunny’s Peaches and Cream Pancake

Ingredients

  1. One 10.6-ounce jug “just add water” pancake mix
  2. Zest and juice of 1 lemon
  3. 4 tablespoons unsalted butter
  4. 1/4 packed cup light brown sugar
  5. 1/4 teaspoon ground cinnamon
  6. Kosher salt
  7. Half a 10-ounce bag frozen sliced peaches (about 1 1/4 cups)
  8. 8 ounces whipped cream cheese
  9. 1/2 cup powdered sugar
  10. 1/2 cup to 3/4 cup heavy cream or milk

Instructions

  1. Preheat the oven to 375 degrees F.
  2. In a medium bowl, make enough pancake batter according to the package instructions to make 6 pancakes. Whisk the lemon juice into the batter. Let rest in the refrigerator while you make the peaches.
  3. Heat an oven-safe 10-inch nonstick skillet over medium heat. Add the butter, brown sugar, cinnamon and a pinch of salt. Cook and mix together until the butter is melted and the mixture is combined. Add the frozen peaches and mix to coat. Let cook for 1 to 2 minutes. Pour the pancake batter over the peach mixture. Transfer to the oven and bake until golden brown and a toothpick inserted in the center comes out clean, 15 to 20 minutes.
  4. In a medium bowl whisk together the cream cheese, lemon zest and powdered sugar. Add 1/2 cup heavy cream and a pinch of salt. The icing should be thick but pourable. If needed, whisk in more heavy cream 1 tablespoon at a time until pourable.
  5. Remove the pancake from the oven. Slice like a pie and serve each slice drizzled with the icing.

This is a fabulous variation on pancakes that takes hardly any time and even less effort. So far I’ve tried it with mostly fresh fruit combinations—mixed berries or pitted cherries with sliced pears (yum)—and it’s always delish. I usually make individual servings in oven-safe soup bowls. Kids seem to love that. Thanks for this welcome addition to breakfast, Sunny!

I had friends from out of town staying with me and made this one. It was an absolute hit. They loved it. I only had baking mix, but mixed it according to the package and finished the recipe. It made me think bananas?…or even apples on the bottom. I might never make regular pancakes again. Love!

I love this!! It is addicting, delicious and fast!! I saw this made on “The Kitchen”! I made it the next day and haven’t stopped. I switch up the fruit sometimes. I use the can fruit, throughly strained and add 1/4 teaspoon of cornstarch with the fruit. Many thanks for sharing the recipe!! Love your show too!!

Excellent, I see this working with so many combinations of fruit.    I used frozen and  recommend it for texture reasons.  The peaches are definitely a bit firmer using frozen which I think adds to the enjoyment.
