Ingredients
- 2 cups shredded Cheddar/Jack cheese blend
- 8 ounces onion and chive-flavored whipped cream cheese
- 1/2 teaspoon hot Hungarian paprika
- 8 to 10 ounces beer
- Kosher salt and freshly ground black pepper
- One 12- to 16-ounce boneless rib-eye, slightly frozen, then very thinly sliced
- 2 teaspoons seasoning salt
- Freshly ground black pepper
- 2 Italian heroes, split lengthwise but not in half
- Mayonnaise, for spreading
- Ketchup, for spreading
- Pickled jalapenos, for topping
- Pickled sweet peppers, for topping
Instructions
- For the cheese sauce. In a saucepot on medium heat, add the shredded cheese, cream cheese, paprika, 8 ounces of the beer, a pinch of salt and a few grinds of pepper. Cook, stirring, until melted. Keep warm, adding beer to loosen if needed.
- For the beef: On a griddle on high heat, add the beef and as it is cooking, sprinkle with the seasoning salt and black pepper. Cook quickly on high while flipping and allowing all sides to have contact with the griddle, for just a few minutes. Remove to a plate and cover lightly with aluminum foil.
- For the sandwich. On the inside of one side of each hero, add mayonnaise. On the other side, spread some ketchup. Add the beef, jalapenos, sweet peppers and cheese sauce. Close it up and go to town!

This was awesome! My 5 yr old said he has a new favorite. I kind of incorporated a step I saw Jeff Mauro use. I ladeled the cheese sauce directly onto the meat on the griddle. Then, I added more cheese sauce on top after the meat was in the bread. Totally delicious! Thanks Sunny! Love you girlfriend!
This sandwich is definitely a keeper for us! I used spicy Montreal steak seasoning on the ribeye. The juices from the cooked meat soaked into the bread and added even more flavor. We personalized our sandwich by adding shredded lettuce and red onion for crunch and leaving out the pickled items. The cheese sauce was delicious, but I would cut the amounts in half next time. We had so much left over! The sauce was also a little thinner than we wanted, and so next time I’ll use a little less beer. I’ll make this again when we want a sandwich that’s out of the ordinary.
Made this tonight and it was a huge hit with hubby and 18 year old son. It certainly wasn’t “traditional” but it was yummy. (The only criticism was that my son wasn’t a fan of the ketchup, but that’s just personal taste.) A couple of notes; 1. It makes a lot of cheese sauce. I had at least half left over. No problem, though, it will make a great corn chip dip! 2. Hot Hungarian Paprika was difficult to find. Finally found it at a Publix, but wish a substitute was suggested.

Theresa, this is not helpful and brings down the rating of what might be an excellent recipe; make the recipe and review it based on how it turned out!
Just counteracting Theresa’s silly one star review based completely on the recipe’s “name”
But did ya try it? Call it something else if it offends. Looks FAB!!!
