Ingredients
- 1 ⅛ cups all-purpose flour
- 1 ⅛ cups whole wheat flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup butter
- 5 tablespoons brown sugar
- 5 tablespoons white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup sunflower seeds
- 2 cups flaked coconut
Instructions
- In a large mixing bowl, cream together sugar and butter or margarine. Beat in eggs and vanilla.
- Stir in flour, salt and baking soda. Add coconut and sunflower seeds. Mix together well.
- Drop by spoonfuls onto greased cookie sheet. Bake at 350 degrees F (175 degrees C) for 8 to 10 minutes.

Oh I so wanted this to be good but was very disappointed. The recipe as written looked like an adaption of another. I used 1/2 cup white and a 1/2 cup brown sugar and sprinkled some sugar on top but it did not really help. It needs something but not sure what. The taste was just blah though the texture was nice and cake like. Wish my review was a different story.

These cookies are pretty good. They taste very buttery, and remind me of shortbread in this way. I like them, though, although they aren’t the best I’ve ever had. I may make them again, may not…
