My recipe dates back more than 25 years. In Puerto Rico, people love Franco’s brazo gitano from Mayaguez. Although my homemade version may not be an exact replica, I believe it to be at least as nice. To suit your preferences, combine the fillings. Many people enjoy eating cream cheese with their preferred fruit.

Ingredients
- ½ cup white sugar
- 2 tablespoons all-purpose flour
- 2 teaspoons ground cinnamon
- 3 tablespoons unsalted butter
- 1 (14.1 ounce) package double-crust pie pastry, thawed
- 6 medium tart apples – peeled, cored and sliced
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Place a baking sheet on an oven rack.
- Stir sugar, flour, and cinnamon together in a small bowl until well combined. Cut butter into small pieces; divide into two equal piles.
- Roll out pastry to an 11- or 12-inch circle; press into a 9-inch pie pan. Roll out top crust and set aside.
- Place sliced apples into a large bowl. Pour sugar mixture over top and add 1/2 of the butter pieces. Toss apples until thoroughly coated. Pour into the pastry-lined pie pan.
- Dot apples with remaining butter. Place second pastry on top. Seal edges and cut steam vents in top crust.
- Set pie on the baking sheet in the preheated oven. Bake until filling is bubbly and crust is golden brown, 50 minutes to 1 hour.

Delicious!!! We use four Gala apples and two Granny Smith and added some walnuts to the apple mixture to give it a bit of crunch, also we brushed melted butter with a dash of sugar 15-20 min. before it finished baking. Everybody loved it!!! A fun recipe to cook with my 8 year old niece!!
Still cooking but it smells great. Used 7 cups of diced green apples and 1 cup sugar – 2 tbsp cinnamon and 2 tbsp apple pie spice with 6 tsps butter (diced small) and 3 tbsp flour mixed it all together and split into 2 pie pans and covered with top crusts. I tried some of the apple mixture before baking and it tastes really good but I love spiced apples.
This pie was a big hit! I followed the advice of some other reviewers and added some brown sugar –2 TBL–and about 3/4 tsp of nutmeg. I used the refrigerated Pillsbury pie crusts. Because they were so large, I used only five apples, two Granny Smith and three Pink Lady. Even so, I piled the slices high in the crust and still had a small amount left. I used a tip I found from Sister Pies in Detroit. After chilling the bottom crust, I spread a tablespoon or so of softened cream cheese on the bottom before filling with the apples. I baked the pie for 20 minutes at 425 degrees and then for the remaining 45 minutes at 350. (I used the trimmings from the crust to line a custard cup, and added the remaining apples to make a small “tart”.) I took the pie to friends’ for dinner, and everyone raved! I’ll definitely make it again.

I made this with some additions. I added 1/4 cup water, melted butter on the top crust with sprinkled white sugar on the top. 2 1/2 tbsp cinnamon, and 1/2 tbsp nutmeg. I also added lemon juice to the sliced apples before I mixed in the glaze.

I make this every year for Thanksgiving. this year I made two. because last year my husband didnt get a piece and I heard about it all year! That being said, I gave 4 stars because I have tweaked it from the original recipe. I use 1/2 brown, 1/2 white sugar. I add nutmeg and vanilla about a tsp each. and I always use premade dough. This is a fantastic basic recipe that is easy to change up and play with. It’s my go to apple pie recipe.
A little bit sweet for my taste, so will knock the sugar back a bit next time. Maybe it was the apples, because I used pink lady and honey crisp. Will put some Granny Smith in next time and that should tone down the sweet. Everyone loved this pie! I put some nuefchatel cheese (low fat cream cheese) pieces with the butter in the apples. Used an egg wash, using whole egg, on the top crust and edges. My, oh, my…what a pie!
Yes I will make it again but will try a different Apple. Just added a pinch of nutmeg.
Used stevia instead of sugar. Brother is diabetic. Worked great. No pie left.
Followed this recipe only added a tablespoon of brown sugar a few dashes of nutmeg and teaspoon of vanilla extract baked on 400 for 30 min it was perfect !

I made this, as written. It was a perfectly delish pie, but it wasn’t mind blowing. I will use this recipe again, but will likely tweak it somehow to pizzazz it up a bit. More spices, maybe sweeter.. Not sure. It was just a bit of a plain jane run of the mill apple pie. Nothing wrong with that!
Made this with my five year old daughter. The only thing I changed, was instead of 2 teaspoons of cinnamon, we used one of cinnamon and one of apple pie spice.
I love this recipe! I use 3 different kinds of apples depending on what sounds good. Usually Granny Smith, Honey Crisp (if I can find them), and another red – something a little tarter that holds up while baking. I also use half white and half brown sugar.
