Ingredients
- 3 tomatoes
- 1 teaspoon salt, or as needed
- 1 summer squash, finely diced
- ½ cup dry herb stuffing mix
- 2 teaspoons dried basil
- ¼ teaspoon ground black pepper
- ¼ cup shredded mozzarella cheese
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Slice the tomatoes in half horizontally, sprinkle each cut side with salt, and place cut sides down on paper towels for about 5 minutes. Hollow out the tomato halves, leaving sides 1/4 inch thick; remove seeds from pulp, and chop the pulp.
- Place the chopped tomato pulp, squash, herb stuffing mix, basil, black pepper, and mozzarella cheese in a bowl, and mix until thoroughly combined. Stuff the mixture into the hollowed-out tomato halves.
- Bake in the preheated oven until the squash is tender and the cheese has melted, about 20 minutes.

This recipe is by far amazing!! I prepped , baked and ate it all within 40 minutes. I plan to try with corn and corn meal in place of the squash and stuffing mix. I also plan to make with garlic onion pepperoni and salami with out the squash. Yum!!
8.9.18 One-half tomato was lunch today along with a scoop of low-fat cottage cheese. You do want to make it in the summer when tomatoes are at their peak in flavor. One thing that I like about this is that the stuffing doesn’t overshadow the actual flavor of the fresh tomato, they share equally. Quick and easy, healthy, and most importantly, TASTY!

I really enjoyed this. The man liked it too, but with every bite, he said he wished it had crab meat in it. We do live in crab-land, and it’s summer, so that did not surprise me. Next time, I will increase the S&P, and use fresh basil instead of dried, and maybe add a little garlic and onion to really make it pop. Thanks!
After eating, I felt like i waisted a lot of good ingredients. I like everything in this dish, but the flavor was blah. I will not be making this again.
