Ingredients
- 2 tomatoes, cut into chunks
- ½ cucumber – peeled, seeded, and diced
- 1 large ripe nectarine, diced
- 3 tablespoons chopped fresh cilantro
- 1 tablespoon olive oil
- 3 tablespoons crumbled goat cheese
Instructions
- Mix tomatoes, cucumber, nectarine, and cilantro together in a bowl. Stir in olive oil gently. Sprinkle goat cheese over salad.
- You could also drizzle in some good balsamic vinegar with the olive oil.
- Goat cheese is easily crumbled in the package by stirring it with a small fork.

This was really good!!! I found it a little on the bland side as written, but I added a sprinkle of salt and that made a world of difference. I also ended up adding a drizzle of white balsamic, as suggested in the Cook’s Notes. This is best eaten right away, as the goat cheese ends up “melting” into the salad and turning the liquid whitish. Definitely doesn’t affect the flavor though! I will be making this again! Also note that this makes way more than 4 side servings.
