Summer Fruit Salad with Whipped Cream

If chilled and covered, this fruit salad with whipped cream topping can be prepared four hours in advance. In place of Chambord, you can use Grand Marnier or raspberry extract.

Ingredients

  1. ⅓ cup water
  2. 5 tablespoons white sugar
  3. ¼ cup raspberry-flavored liqueur (such as Chambord )
  4. 2 tablespoons fresh lemon juice
  5. 2 cups diced nectarines
  6. 1 cup pitted and halved sweet cherries
  7. 1 cup sliced strawberries
  8. 1 cup fresh raspberries
  9. 1 cup fresh blueberries
  10. ⅓ cup heavy whipping cream
  11. 2 teaspoons white sugar
  12. 1 teaspoon raspberry-flavored liqueur (such as Chambord®)
  13. 3 tablespoons toasted slivered almonds

Instructions

  1. Stir water, 5 tablespoons sugar, 1/4 cup raspberry-flavored liqueur, and lemon juice together in a saucepan over medium-low heat. Bring mixture to a boil, reduce heat to low, and simmer, frequently stirring, until sugar dissolves completely, about 8 minutes. Set aside to cool.
  2. Mix nectarines, cherries, strawberries, raspberries, and blueberries in a large bowl. Pour cooled sugar mixture over fruit and toss gently to coat.
  3. Beat heavy whipping cream and 2 teaspoons sugar in a bowl with an electric hand mixer on high until stiff peaks form. Fold 1 teaspoon raspberry-flavored liqueur into whipped cream; spoon over fruit salad and sprinkle evenly with almonds.

No nectarines or cherries in season here now, so I used mango and blackberries. I thought I had raspberry liquor, but did not, so I subbed triple sec. 1/3 cup of whipping cream, was too small of an amount, so I doubled it. Everyone loved it.

The raspberry liqueur is subtle in both the dressing and the whipped topping. I would think some raspberry extract would work well in this if you don’t have the Chambord. Didn’t have any raspberries, so I substituted some green grapes, and I literally forgot the almonds (think they’d be a nice addition). This was a great dessert on a smokin’ hot Florida day! The summer fruits are starting to come in season, so bring on the fruit salads!!
