I needed a supper meal that I could prepare for a sizable gathering without going over budget or taking all day to prepare. I therefore decided tacos would be the answer! I tossed a few items together and made some delicious tacos with shredded chicken. The meat is excellent for nachos or other dishes, but I served them on corn tortillas with sliced white onion, cilantro, and freshly quartered limes for a more “authentic” feel.

Ingredients
- ¼ cup vegetable oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons white sugar
- 1 head green leaf lettuce, torn into bite-size pieces
Instructions
- Whisk the vegetable oil, vinegar, and sugar in a small bowl. Place the lettuce in a large bowl. Drizzle the oil mixture over the lettuce and toss to coat.

A very simple oil and vingegar mixture to liven up your mixed greens! I used olive oil vs. veg. oil and cut back on the sugar. I also added a little salt and cracked black pepper. I used a mix of romaine and butter lettuce to toss this with and this is a great base to add whatever veggies you like.

This was a nice way to eat up some of our leaf lettuce from the garden. Have way too much lettuce and was looking for differant ways to dress it up.
