For potlucks, this taco salad is a fantastic entrée. It is simple to prepare in advance. Just before serving, add the dressing.

Ingredients

  1. 1 pound lean ground beef
  2. 1 (1 ounce) package taco seasoning mix
  3. ½ (14.5 ounce) package nacho-flavor tortilla chips
  4. 2 cups shredded Cheddar cheese
  5. ½ (15 ounce) can kidney beans, drained
  6. ½ cup ranch-style salad dressing
  7. 1 chopped tomato
  8. 1 cup chopped lettuce
  9. ¼ cup chopped green onion

Instructions

  1. Place ground beef in a large, deep skillet over medium-high heat. Cook, stirring to crumble, until well done; drain. Stir in taco seasoning mix. Set aside to cool.
  2. Place chips into a large bowl; crush them into bite-sized pieces. Combine with seasoned meat, cheese, beans, tomatoes, lettuce, and green onions.
  3. Pour dressing on top; toss to coat.

Loved it! But I traded the ranch dressing for fresh lemon juice mixed over avocado pieces. Also added chopped olives and orange peppers.

My mom made this a lot for potlucks when I was a kid and it disappeared quickly; I still make it today. Only difference is instead of Ranch, we use Dorothy Lynch (or Western, or any French dressing) along with taco sauce to dress it. Adjust to taste.

My family loves this recipe. The only changes I make are to include a few things others have mentioned, like olives, avocado, and bell pepper. Ranch is great, but this recipe works well with Italian or even Thousand Island. I like to serve with a lime wedge.

I used ground turkey instead of ground beef. Turned out fine. I also used a cruciferous blend of kale and other crunchy veggies instead of just iceberg. I made it for a party and it went over very well. Will definitely make again.

This was delicious. I made one change – I cooked rotelle pasta (the curly one) and added that (warm) to the mixture. Yummy!

Easy quick and tastes good. I have added muted avocado to the ranch dressing. One note about the corn chips. Separate them from the rest of the ingredients so that it can be added next day without having soggy chips. I just sprinkle on top as we have on individual plate.

I quite liked this. I did as others recommended and only added the chips to the plate as serving and only mixed enough salad/dressing for serving so that the leftovers don’t go mushy. The only reason this is rated down a star is because I found it quite salty so didn’t finish my serving, and upon eating each part separately I discovered it was the ranch dressing I had used that was the issue. When I have the leftovers I will try another dressing – maybe a Caesar as I love that with anything. I recommend using a dressing you love and then you should love this dish as well.

I scaled this down and made it as a one-dish supper for myself, and it was great! I used the Smoked Paprika Vinaigrette dressing from this site, and it worked well (slightly sweet and similar to a Catalina dressing that others mentioned). I don’t think I’d care for Ranch dressing here. I used Taco Seasoning I from this site with the hamburg. I also added avocado, black olives, black beans in place of the kidney, shredded Mexican cheese and very few (4) tortilla chips. What a great supper!

Easy, Quick, basic recipe. I did this buffet style so everyone could customize: had chopped greens mixture, black olives, shredded mex cheese, salsa, guacamole (am going to do this with avocados slices too), plain greek yogurt(instead of sour cream), black beans and ground beef browned with taco seasoning and tortilla chips. It was delicious!!

This is my “go to” recipe!! I add about 1/2 cup of medium salsa. I add more salsa when I don’t add tomatoes to the salad. I sometimes add re fried beans or drained canned black beans to the meat/taco seasoning in the pan for extra fiber. Cool Ranch Doritos are my family’s favorite on this salad, but regular Doritos are good, too!

This is one of our favorite taco salads. I make it as submitted, generally adding either sliced olives or chopped avocado. Great summer meal.
