Ingredients
- 1/4 cup mascarpone cheese, at room temperature
- 1/4 teaspoon pure vanilla extract
- 1 cup powdered sugar
- 12 large strawberries
- 24 mini chocolate chips
Instructions
- For the frosting: In a medium bowl, using an electric hand mixer, beat the mascarpone and vanilla until smooth. Gradually beat in the powdered sugar until the mixture is thick and smooth. Using a spatula, transfer the frosting to a piping bag fitted with a small star piping tip.
- For the Santas: Using a paring knife, cut off the leaf-end of each strawberry to make a flat surface. Cut a 1/2- to 3/4-inch piece from the pointed end of each strawberry and reserve as the hats.
- Place the strawberries, wide-side down, on a work surface. Pipe a 3/4-inch-high swirl of frosting on each strawberry. Place the hats on top and pipe a small ball of frosting on top of the hats. Press two chocolate chips, pointed-sides inward, into the swirl of frosting to make eyes.

The cheese filling is really good. Just the right amount of sweetness with the fruit. It is easy to make and so cute looking. I made the filling in advance., which made making the Santa’s really quick Christmas Day.
These are adorable and delicious. The feeling is so scrumptious. They don’t hold up very well the next day though so gobble them up.

These are delicious! My daughters ask for them every Christmas. They are very festive and cute. We’re bringing them to brunch at my mom’s house this year. A lot of reviews said the frosting didn’t work for them. I had no trouble and think the trick is making sure your strawberries are dry.
I made these last year, but only used Cool Whip for the beard. Worked out perfectly.
A little sweeter then expected but delicious. All three generations loved them for Christmas brunch. No problems at all with graininess or the filling being too loose. My consistency turned out perfect. Will make again this year.
I have made these for the past 3 years…..I try to make the cut for the hat parallel to the table, (place the berry on the table and cut holding knife parallel) dry the cut edges with paper towel….I do all the cuts, set the berry with its hat top on the towel….I then do santa’s face, set the berry down , put the pom pom on the tip, then I put a toothpick through the hat and down through the berry…..I leave some of the toothpick showing as a heads up….for the eyes, I dip a toothpick into my colour paste and dab the eyes on, I then add another row of icing for the beard…..
