Strawberry-Rhubarb Compote

This delicious salad of butternut squash, romaine lettuce, raisins, onions, and crispy bacon. both easy and delicious!

Ingredients

  1. 2 cups chopped fresh strawberries
  2. 2 cups chopped rhubarb
  3. ⅓ cup brown sugar
  4. ⅛ teaspoon salt

Instructions

  1. Combine chopped strawberries and rhubarb in a saucepan. Add sugar and salt; stir to coat evenly. Let sit until fruit has released its juices, about 10 minutes.
  2. Bring fruit mixture to a light boil over medium heat. Reduce heat to medium-low and simmer, stirring occasionally, until fruit is soft and mixture has thickened, about 20 minutes. Remove from heat and let cool, about 30 minutes. Mixture will further thicken upon cooling. Place in a jar or storage container and refrigerate for up to a week.
  3. You can substitute white sugar for the brown sugar if desired.

I have a ton of rhubarb in the garden to use. Making a double batch and sharing with my mom. The plants are originally from her garden which were from her father’s garden. This came out amazing!!!

I’ve always wondered how rhubarb turned out to such deliciousness..this was easy to make..I just finished it and did a taste test, I love it! I made it to go on top of a cheesecake that I currently have in the oven..can’t wait to spead it on there..its gonna be soooo good !

Holy smokes this was awesome! It’s sweet. It’s tart. It’s addictive. While it was still hot, I put it on my pancakes. Oh my was it good. I put it in crepes for brunch. I added it to my yogurt and then just caved in and ate it with a spoon right out of the jar. I quickly made another batch. That’s how good this is. It gives about 3/4 pint or 400 ml. Love this stuff!
