Ingredients

  1. 2 pounds frozen strawberries, thawed
  2. 2 cups granulated sugar, plus more for tossing
  3. 5 tablespoons liquid pectin

Instructions

  1. Puree the thawed frozen strawberries in a blender, then strain into a wide saucepan. Stir in the sugar and boil, stirring occasionally, until a candy thermometer registers 223 degrees F, 30 minutes to 1 hour. Reduce the heat to low and cook 3 more minutes. Remove from the heat and stir in the liquid pectin.
  2. Pour the strawberry mixture into a foil-lined 8-inch square baking dish and refrigerate until firm. Cut into squares, then toss in sugar to coat.

Didn’t set even after chilling for 24 hours. Maybe double the pectin or just use gelatin? Otherwise, save your strawberries and time for something else.
