Strawberry Goat Cheese Bruschetta

  4.8 – 86 reviews

It’s amazing how well the tart, slightly salty goat cheese pairs with the sweet, balsamic-glazed strawberries and crunchy, charred toast.

Prep Time: 10 mins
Cook Time: 15 mins
Total Time: 25 mins
Servings: 6
Yield: 12 slices

Ingredients

  1. ½ cup balsamic vinegar
  2. 12 slices Italian bread
  3. 1 tablespoon olive oil
  4. 1 pound strawberries, washed and diced
  5. 2 teaspoons fresh thyme leaves, plus more for serving
  6. 1 cup goat cheese, room temperature
  7. salt and freshly ground pepper to taste

Instructions

  1. Heat vinegar in a small skillet over medium-low heat. Simmer until reduced by about half, 8 to 10 minutes. Remove from heat and allow to cool to room temperature.
  2. Prepare a grill for high heat. Place bread slices on a foil-lined baking sheet and drizzle with olive oil.
  3. Combine strawberries and thyme in a small bowl and set aside.
  4. Grill bread on the preheated grill until browned, about 3 minutes per side.
  5. Spread goat cheese on toasted bread. Add black pepper, salt, and reduced vinegar to the strawberry mixture. Spoon over the goat cheese topped bruschetta. Garnish with additional thyme.
  6. You can toast the bread under the broiler instead of on a grill if needed.

Absolutely delicious! Very easy to make – works best when strawberries are in season but I still make it when they aren’t.

I made in an air fryer; it was quick and easy cleanup. Other fruits can be used too. I tried mango and it paired well with the balsamic reduction.

Wow! I couldn’t believe how wonderful this tasted. I toasted a split ciabatta bun from Costco, drizzled balsamic reduction vinegar over strawberries to cut calories and used dried thyme leaves because that’s what I had. Magnificent!

I made the recipe just as indicated and it tasted great but didn’t present well, especially after 30 minutes on the counter. So I made it again but just drizzled store-bought balsamic glaze over the goat cheese and strawberries and left the thyme on the side. This method tastes and looks even fresher than the original.

Fantastic recipe. Went down a storm with my family and guests.

So good. Seems like an elegant appetizer but really was not hard at all and presents very nice. I added a little julianned basil on top too.

Great mix of flavors for an unexpected combination. Used spreadable goat cheese and dried thyme. Fresh might add more flavor but it was still excellent.

I made this tonight but used grilled chicken instead of bread. I was very pleased with the recipe. The acidity of the strawberries really balances against the creaminess of the goat cheese. I will make it again!

Delicious…I used chocolate balsamic vinegar…wow it was awesome!

Delicious! I did add some honey to add a bit more sweetness. Everyone loved it at our get together.

This got rave reviews from my scrutinizing taste testers. I didn’t have fresh thyme, so used dried. I think it would have been nicer with the fresh herb. I burnt some of the bread- you have to watch it carefully.

Great given summer’s bounty. Easy recipe to adapt to most fruits

Yes! Made these as written and one time using raspberries instead. Wonderful starter.

What a fantastic recipe! I had guests coming over to sit outside on a beautiful summer evening. This was the dish we made to go with cocktails. I made it exactly as the recipe indicated and I’ll make it again.
