Strawberry Fool

Ingredients

  1. 2 cups sliced strawberries
  2. 1/2 cup sugar
  3. 2 tablespoons fresh lemon juice
  4. 2 cups heavy cream
  5. Mint leaves, for garnish

Instructions

  1. In a blender, combine the strawberries (reserve a few slices for garnish), sugar and lemon juice. Puree until smooth. Push the berry mixture through a sieve and discard the seeds.
  2. Using an electric mixer, whip the cream just until stiff peaks form. Take a large spoonful of the whipped cream and stir it into the strawberry puree to lighten the mix. Fold the strawberry mixture gently into the whipped cream. Gently spoon the fool into a chilled serving bowl and garnish with the reserved strawberries and mint leaves. Refrigerate before serving, at least 1 hour and up to 4 hours.

This is simple and perfectly balanced. I put some crushed amaretti in the bottom of the glass with a half tablespoon of almond liquor and then grated amaretti over the top before finishing each one with a small strawberry.

This recipe was a great dessert. Not too sweet but very satisfying. Added a drop of vanilla extract to the whipped cream. Whole family loved.

PHENOMENAL. Initially I doubted such a simplistic recipe could be five star worthy. Also had to resist the urge to add sugar to the heavy whipping cream. So glad I didn’t because finished product was perfectly sweet. I did include a scant teaspoon of vanilla bean paste to the whipped cream. Absolutely delicious!

It’s worth taste testing based on the quality of the berries you are using . Also very rich. Served it in individual parfait glasses but realized that portions should have been much smaller……unless you are under the age of 10!
