Ingredients
- One 1-pound bag frozen unsweetened strawberries, thawed
- 2 tablespoons sour cream
- 1 scant cup chilled heavy whipping cream
- Eight 2-inch vanilla meringue cookies, coarsely broken (about 2 cups), plus 2 more, halved
Instructions
- In a medium bowl, using a potato masher or fork, mash the berries and any juices into a chunky sauce.
- Place the sour cream in a 1-cup measuring cup. Add enough chilled heavy cream to fill the cup completely. Scrape the cream mixture into a deep medium bowl. Beat the mixture until thick and stiff with a handheld electric mixer. Fold in the broken meringues.
- Divide the sauce in half and spoon into the bottom of four serving bowls or glasses. Divide the cream mixture in half and spoon on top of the sauce. Repeat the layers using the remaining sauce and cream mixture. Top each parfait with a meringue half and serve immediately.

Wow! After failing miserably at trying out a homeade recipe, my compassionate friend kindly made this one for me. Now it might be due to her doctorate in sour-cream parfait cooking, but it was fantastic. The sour cream flowed like silk in the mouth while the the strawberries’ taste popped like firecrackers. I would recommend this at any party, wedding, fireworks show, or street race. Simply splended!

This is a light and very easy recipe to prepare. I love the meringue cookies! I used frozen strawberries but would like to try fresh next time. I used a lighter cream instead of heavy and it turned out great.
My family and I loved it. Next time I’ll double the recipe. I used meringue cookies from Publix and my five yr. old grandson had never seen them before. He came in while I was making it and asked if he could help crush the “garlics”. for the whipped cream. :

This recipe is light and refreshing, and very easy to make. I used fresh strawberries and chocolate meringues. Awesome!
