Ingredients
- 4 cups strawberries, chopped
- ½ cup white sugar
- 2 teaspoons balsamic vinegar
- ⅛ teaspoon salt
Instructions
- Combine chopped strawberries, sugar, balsamic vinegar, and salt in a saucepan; stir to coat evenly. Let sit until berries have released their juices, about 10 minutes.
- Bring to a light boil over medium heat. Reduce heat to medium-low and simmer, stirring occasionally, until strawberries are soft and compote has thickened, about 20 minutes. Remove from heat and let cool slightly; serve warm or cool. Compote will thicken further as it cools.
- Cut back the sugar to 1/3 cup if you like things a little less sweet.

I made it to go with homemade vanilla ice cream. it was delightful! I suggest letting it sit in the refrigerator a few hours after making it. The flavor is wonderful! It was a hit with the family.
I made this to top Chef John’s frozen vanilla custard and it was yummy! I love balsamic vinegar and the flavor goes well with strawberry, however, next time I would reduce the amount to 1 teaspoon (maybe 1.5) as I found the flavor to slightly overwhelm the strawberries. That being said, if you let this reduce further and become quite thick, it would go so well on some brie or any appetizer where one would like savory and sweet.

The first taste of this on toast with a little real butter was absolutely amazing. So simple and good. Try it. You’ll love it. We put it over ice cream, and I’m thinking of ways to use it up in yogurt and smoothies. I may freeze half of it for use later as it will only keep for about a week. Lo calorie, too. Perk!
Simple and delicious
My girlfriend went strawberry picking and was going to make strawberry waffles. I made this to top the waffles. It was very tasty.
