Strawberry Beer Bread with Fresh Basil

Ingredients

  1. cooking spray
  2. 3 cups self-rising flour
  3. ¼ cup white sugar
  4. 1 (12 fluid ounce) can or bottle fruity beer
  5. 1 ½ cups chopped strawberries
  6. ½ cup loosely packed chopped fresh basil leaves
  7. 1 tablespoon coarse sugar, or as needed (Optional)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray a 9×5-inch loaf pan with cooking spray.
  2. Stir flour and white sugar together in a large mixing bowl. Pour in beer and stir. Add strawberries and basil and stir until well combined; batter will be stiff and sticky. Scoop batter into the prepared loaf pan. Sprinkle the top generously with coarse sugar.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 60 minutes.

This recipe sounds fantastic but it didn’t really work. It definitely needs fat of some kind.
