Ingredients

  1. 2 cups all-purpose flour
  2. 1 ½ teaspoons baking powder
  3. 1 teaspoon ground cinnamon
  4. ½ teaspoon salt
  5. 2 eggs
  6. ⅓ cup confectioners’ sugar
  7. 1 cup milk
  8. 1 teaspoon vegetable oil
  9. 1 teaspoon vanilla extract
  10. 2 bananas, chopped
  11. ½ cup chopped strawberries
  12. ¼ cup vegetable oil for frying

Instructions

  1. Sift flour, baking powder, cinnamon, and salt together in a bowl.
  2. Whisk eggs and confectioners’ sugar together in a large bowl. Add milk, 1 teaspoon oil, and vanilla extract; mix well to combine. Add flour mixture; stir until just combined. Gently fold bananas and strawberries into batter.
  3. Heat 1/4 cup oil in a large nonstick skillet over medium heat. Scoop 1/4 cup batter at a time into the oil and fry fritters, in batches, until light golden brown, 2 to 3 minutes per side. Drain on paper towels.
  4. For a healthier alternative, pan-fry fritters without oil in a nonstick skillet.

Fantastic! I used gluten free all-purpose flour instead of wheat flour. I also chose the “healthy alternative” in the notes and made them in a non-stick skillet. This made them look a bit more like a pancake, but they were light, airy and crispy nonetheless. Definitely a treat for your next brunch. Thank you for the recipe.
