Ingredients
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1 heart romaine lettuce, torn or cut into bite-sized pieces (3 cups lightly packed)
- 1 8-ounce container of strawberries, hulled and sliced
- 3 ounces part-skim mozzarella cheese, diced (about 3/4 cup)
- 1/4 cup fresh basil leaves, cut into ribbons
Instructions
- In a small bowl whisk together the oil, vinegar salt and pepper. Place the lettuce in a large bowl and toss with half the dressing. Place the lettuce onto 4 salad plates.
- Toss the strawberries with the remaining dressing and place 1/4 of the berries on top of each mound of lettuce. Top each with cheese and sprinkle with the basil.

Very good! We used a bag of mixed salad because we didn’t have romaine and I still loved it-I’m sure it would work on spinach greens too…I can’t wait to make it again with romaine!

This salad is so easy to make and it is absolutely delicious! My husband wasn’t a fan of the basil but I thought it made it perfect. Please try it. You’ll love it.
I made this for a dinner party last evening without having tried it first but figured that I like Balsamic/Mozzarella and I like Balsamic/Strawberry so it couldn’t go too far astray. Simple ingredients and simple to prep. Totally delicious. We made it as specified but used fresh mozzarella instead of the regular style so it was perhaps a little on the saltier side but still good. I used my good aged balsamic which I sometimes use on strawberries as a stand alone dessert and it really shined in this recipe. I will absolutely make this again.
well i did not like the taste that the ground peper gives it, but other than that it tastes divine. its my first time eating fruit with salads. and if you like me add some cruttons with a little bit of garlic…its just celestial
This is the PERFECT summer salad! It’s light and creamy, totally delicious. I wasn’t a huge fan of the dressing so I made homemade strawberry vinegrette. I also added toasted pine nuts for a yummy crunch.
