Stone Fruit and Tomato Salad

Despite not being very sweet, this dish is creamy. I substitute half-and-half for the recipe’s specified cream. The pumpkin puree contributes much to the smoothness. This goes well with coffee, but tastes even better with a fine port. Whipping cream should be added before serving.

Ingredients

  1. 1 fresh peach, chopped
  2. 2 plums, pitted and chopped
  3. 1 cup chopped tomato
  4. 1 cup pitted and halved cherries
  5. 2 tablespoons chopped fresh parsley
  6. 1 teaspoon lemon zest
  7. 1 tablespoon lemon juice
  8. 1 clove garlic, minced
  9. ¼ teaspoon salt
  10. ⅛ teaspoon ground black pepper
  11. 1 tablespoon extra-virgin olive oil

Instructions

  1. Stir together peach, plums, tomato, cherries, parsley, lemon zest, lemon juice, minced garlic, salt, and black pepper in a large bowl until combined. Let stand at least 5 minutes to allow flavors to blend. Drizzle with olive oil and stir to combine.
