Stir-Fried Bok Choy with Ginger and Garlic

Ingredients

  1. 1 tablespoon olive oil
  2. 2 cloves garlic, minced
  3. 1 tablespoon minced fresh ginger
  4. 8 cups chopped fresh bok choy
  5. 2 tablespoons reduced-sodium soy sauce
  6. Salt and ground black pepper

Instructions

  1. Heat oil in a large skillet over medium heat. Add garlic and ginger and cook 1 minute. Add bok choy and soy sauce cook 3 to 5 minutes, until greens are wilted and stalks are crisp-tender. Season, to taste, with salt and black pepper.

Simple and tasty. I made it with shrimp. I basically made it the same way in 2 batches. The first just shrimp and the second, just book choy. I also did add a little yuzu to brighten it up. Easy and delicious!

Delicious and light. We skipped the salt and added some sugar snap. We’ll definitely make this again. Next time I think we’ll add some carrots for added color and flavor.

So delicious and easy!!! Used Liquid Aminos in lieu of soy sauce, which is so yummy! Used extra Liquid Aminos and let the flavors cook a little longer, used the leftovers on my potstickers.
