Stilton Dressing

Ingredients

  1. 4 ounces Stilton cheese, chopped
  2. 1 cup mayonnaise
  3. 1 cup heavy cream
  4. 2 tablespoons tarragon vinegar
  5. 1 teaspoon kosher salt
  6. 1/2 teaspoon freshly ground black pepper
  7. 1 head iceberg lettuce, cut in 6 wedges

Instructions

  1. Place the cheese, mayonnaise, heavy cream, vinegar, salt and pepper in the bowl of a food processor fitted with a steel blade and process until smooth. 
  2. Place a wedge of lettuce on each serving plate. Pour enough dressing over the lettuce to moisten. Serve immediately.

I know you’re not supposed to try a recipe for the first time for a dinner party of 6 however I did and EVERYONE raved about this dish.

Although I did not find tarragon vinegar, I made this recipe with champagne vinegar. I served it for a luncheon steak salad. I grilled a boneless T-bone steak and serves a composed salad. My guests we tearing off hunks of the baguette and dipping it into the leftover dressing. Very nice, making it again tonight

I was given a wedge of Stilton and wasn’t sure what to do with it. This recipe was a great use for it and I didn’t find it bland at all, but perhaps my variety of Stilton having apricots in it had something to do with that. Also, I couldn’t find tarragon vinegar so I used regular white and mixed my own tarragon to try and compensate. My mom tried it with me and had to have the recipe.

Easy..a but bland…but will appeal to more folks since some don’t favor strong bleu style cheese. Consider having extra cheese to sprinkle for those who prefer. Nice, cold, crispy lettuce is perfect especially if you add some red onion slices. Red onion adds color and a bit of zip!

Have made dressing per recipe…served two ways…
– ice berg lettuce per recipe WITH whole slices of sugared bacon
– romaine lettuce…inside, small leaves…with dressing as dip

Very simple, easy and good! I used kraft real mayo with cracked pepper. Will make again and again.
