To sate my yearning for fresh salsa, I created this recipe. I used tomatillos as a substitute because I can’t eat raw tomatoes. It works. I can now have some tasty salsa once more.

- 2 hard-cooked eggs, mashed
- 1 avocado, mashed
- ¼ onion, finely chopped
- salt to taste
Instructions
- Stir the egg, avocado, onion, and salt together in bowl until well-mixed.

I have been making a similar version of this for 60 years. The only thing I add to this is lemon juice and seasoned salt & freshly ground pepper. My whole family loves it.
We have an avocaco tree so I’m always looking for ways to use the avocados… It’s a strange combination but absolutely delicious! I served it on club crackers. So very easy.
