Yield: 100 servings

Ingredients

  1. 1 cup kosher salt
  2. 1 cup ground oregano
  3. 1 cup chili powder
  4. 1/2 cup ground black pepper
  5. 1/2 cup cumin
  6. 1/4 cup garlic powder
  7. 1/4 cup cayenne pepper
  8. 37 1/2 pounds sirloin steak, cut into 1-inch cubes
  9. 18 3/4 pounds peeled and cleaned shrimp (16/20 count)
  10. Oil, for grilling
  11. Taco bar fixings of your choice, for serving

Instructions

  1. Heat 2 very large grill pans or griddles to high heat.
  2. Mix together the salt, oregano, chili powder, black pepper, cumin, garlic powder and cayenne pepper in a bowl.
  3. Put the steak cubes and shrimp in separate large bowls. Sprinkle the spice mixture evenly over both and toss to ensure the steak and shrimp are well coated.
  4. Add some oil to the grill pans and, working in batches, grill the shrimp on one grill pan until they turn from translucent to opaque, and the steak on the other grill pan to medium rare, 3 to 5 minutes per batch. Clean and re-oil the grill pans between batches.
  5. Serve with the taco bar fixings of your choice.

How do you prevent the shrimp from overcooking/turning rubbery in the chafing dish?
Wanting to make it for a party

Delicious!! The seasoning really made the steak stand out. I omitted the cayenne bc I don’t like spicy. It was pretty good on the shrimp also, but not outstanding. My picky eaters ate all of the steak and they usually shy away from steak. Will definitely be making again.

Soooooooooo good!  I made a single (late night) serving by replacing “cup” with “teaspoon,” quick thawed a handful of shrimp, and cooked on the stove top.  Simple, easy, and packed with flavor!

The seasoning is really very good. I cut the recipe down, using a tablespoon measurement for the cup measurement. I ended up with about 1/2 cup of seasoning, which is a much more usable amount for my family. I am pretty sure that she also used ground corriander, so I used 1/8 tsp. Next time I might cut down on the salt a bit, but really, this recipe is spot on. The heat is perfect!

The grilled, spicy shrimp sounded so good that I decided to try it on Saturday night and it was fabulous! Didn’t have it with a taco bar, just a sort of main dish and loved it! Plan to try it with other things, too! Love the simple and delicious! Thanks, Ree!

After watching the graduation party episode my wife wanted to make this recipe. It is fantastic! Especially the sirloin cubes. The seasoning is just delicious, I cooked the meat on skewers on the bbq grill to a nice medium rare to medium. So juicy and tender with an explosion of flavor. Just by itself its to die for. We made steak tacos and the shrimp as well. The shrimp came out beautiful tasted very good, just the spice doesn’t come thru as well on shrimp as it does the beef. The seasoning is so good I will be using it as a rub the next time we bbq some ribeyes! Thank you Ree for sharing! As always your food never fails to satisfy!
