Steak and Guacamole Buns

Ingredients

  1. 1 avocado, diced
  2. 1 tablespoon lemon juice (1/2 lemon)
  3. 1/4 teaspoon kosher salt
  4. 4 potato buns, such as Martin’s
  5. Four 1/4-inch slices smoked mozzarella (about 8 ounces)
  6. Four 2-ounce beef fillets
  7. 3/4 teaspoon cumin
  8. 1/2 teaspoon kosher salt
  9. 1 tablespoon vegetable oil
  10. 1 cup baby arugula

Instructions

  1. For the guacamole: In a medium bowl, mash together the avocado, lemon juice and salt with the back of a fork. Set aside.
  2. For the sandwiches: Split the potato buns. Place a slice of smoked mozzarella on the bottom of each bun. Divide the avocado spread among the bun tops.
  3. Preheat a grill pan over high heat. Meanwhile, place a piece of plastic wrap over the beef fillets and pound them to about 1/6-inch thick. Sprinkle the fillets evenly with the cumin and salt, then drizzle with the oil. Place the fillets on the hot grill pan and cook until deep brown grill marks form, about 2 minutes. Flip and continue to cook for an additional minute, until just cooked through.
  4. Transfer the hot fillets to the buns. Top with a few leaves of arugula and cover with the bun tops.

Made these full size last night.  So delicious!  It’s put together like a burger but when you bite into it, it is such a wonderful surprise!  Definitely don’t substitute any other meat.  My tenderloin steaks were very thick so  I cut it crosswise into two.  Then I pounded them thin.  They were the perfect size for the full-size bun.  I also made a horseradish sauce for a condiment instead of the guac, although I’ll definitely try that the next time.  Yum!!  I’m never having an ordinary burger again!

Giada has def upped her culinary skills evidence here this unique & very delicious take on the burger slider except it’s with pounded out flat steak topped with mozz n avocado.
