Stained Glass Gelatin Cake

A show-stopper, this gelatin cake requires no baking! It looks beautiful and tastes just as good. This stained glass cake is made by packing colorful Jell-O cubes into a cake pan and setting them with white gelatin.

Ingredients

  1. 5 (3 ounce) packages sweetened gelatin mix (such as Jell-O®), 5 different colors
  2. 3 ½ cups boiling water, divided
  3. 3 ½ cups cold water, divided
  4. cooking spray
  5. 1 (1 ounce) package unflavored gelatin powder
  6. 1 (14.1 ounce) can sweetened condensed milk
  7. 1 ¼ cups heavy whipping cream
  8. 1 teaspoon vanilla extract

Instructions

  1. Pour each gelatin mix into a separate bowl. Pour 1/2 cup boiling water into one bowl and stir until gelatin is completely dissolved, about 2 minutes; stir in 1/2 cup cold water. Repeat to dissolve remaining gelatin colors. Refrigerate all bowls until completely set, 4 hours to overnight.
  2. Spray a 9-inch cake pan with cooking spray.
  3. Remove gelatin from the refrigerator and slice each color into cubes. Transfer cubes to a bowl and gently toss together to mix colors randomly. Tip into the prepared pan.
  4. Pour remaining 1 cup cold water into a bowl and sprinkle unflavored gelatin over top; let sit until dissolved, 2 to 3 minutes. Add remaining 1 cup boiling water and stir until gelatin is completely dissolved.
  5. Pour condensed milk into a blender. Add cream, unflavored gelatin mixture, and vanilla; blend until well combined. Pour over gelatin cubes in the cake pan. Use a spatula to evenly distribute milk mixture.
  6. Refrigerate until set, 4 hours to overnight.
  7. Run a knife along the sides of the cake pan and carefully invert cake onto a plate.
  8. If you don’t have powdered gelatin on hand, you can use leaf gelatin. Use the number of leaves needed to set 4 1/2 cups of liquid. Depending on the type of leaf gelatin you have, you will need somewhere around 12 leaves. Follow the package instructions to dissolve the gelatin leaves before adding to the milk and cream mixture.

I made this for an extra dessert at a children’s party and the kids wanted THIS more than the birthday cake! I made it in a tube(bunt)pan and filled the center with well-drained canned fruit. Very impressive. BUT I DO HAVE TO COMMENT: ONLY 1teaspoon of vanilla? Really? 1 tsp. does NOTHING! I added a TABLESPOON of vanilla and still could barely taste it. MORE!

Came out every bit as visually impressive as I’d hoped, and sliced gorgeously! The texture is pleasant, but the taste is much more understated than looks would suggest. I’m thinking of trying a different extract next time.. tutti-fruitti maybe.. to solve this problem. Fun idea: other extracts can be used as well, as can food coloring for the cream base (coordinate with jello selection according to occasion or personal tastes!) Just keep in mind, that impressiveness is earned, this is a lot trickier (and more time-consuming) to make than a simple jello mold.

This is a nice tasting gelatin dessert. I especially love changing up the colors for various holidays. Red and blue, along with the white for the fourth, red and green for Christmas, orange and green or purple for Halloween, and so on.

Super easy to make, with great results! I made it with four packets of jello rather than five, and used two colours. It turned out great, and my father who loves jello was very impressed! It tasted pretty good as well; regardless of the flavour combinations you use, it will taste fruity. It wasn’t very sweet which was a plus, it was a refreshing rather than rich dessert.
