Spring Grilled Cheese

In days gone by, you just needed plain old bread and a slice of Cheddar to make a grilled cheese. But in the age of social media, grilled cheese sandwiches have become more and more outrageous. Ree has decided to contribute to the excess with her spring-themed sandwich, which is totally OTT.

Ingredients

  1. 1 tablespoon olive oil
  2. 8 baby carrots, sliced thin (about 1/2 cup)
  3. 3 stalks kale, destemmed and chiffonade
  4. 3 tablespoons honey
  5. 2 slices focaccia bread
  6. 2 tablespoons mayonnaise
  7. 2 tablespoons pesto
  8. One 4-ounce burrata
  9. 2 slices heirloom tomato
  10. Pinch kosher salt
  11. Pinch freshly ground black pepper
  12. 1 tablespoon chile crisp, or to taste
  13. 2 tablespoons salted butter

Instructions

  1. Turn the oven to broil.
  2. Heat a cast-iron skillet over medium-high heat, then add the olive oil and carrots. Cook for 2 to 3 minutes, then add the kale. Cook, stirring minimally, until slightly charred, 2 to 3 more minutes. Drizzle with half of the honey and stir. Remove the veggies to a plate and turn the heat to medium-low.
  3. Lay out the focaccia slices and spread the mayonnaise on one piece and the pesto on the other. Place the charred kale and carrot mixture on the pesto slice, then top with torn burrata. Place the slices of tomato on the mayonnaise side, then sprinkle over the salt and pepper. Add the chile crisp, then the rest of the honey.
  4. Add the butter to the skillet and melt. Add the two sandwich halves to the skillet and move around in the butter to coat the undersides of the bread. Cook until the bread is crisp underneath, 1 to 2 minutes, then transfer to the broiler. Broil for 2 to 3 minutes, watching carefully. You want a little charring on the toppings, and the sandwich should be heated through. Remove and carefully transfer the two halves to a board. Put the pieces together and slice in half. Let cool slightly before serving.
