Spinach with Black Garlic

Ingredients

  1. 2 tablespoons olive oil
  2. 2 cloves black garlic, thinly sliced
  3. 16 ounces baby spinach
  4. 2 teaspoons sambal oelek
  5. Kosher salt and freshly ground black pepper

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook, stirring frequently, until fragrant, about 1 minute. Add the spinach a large handful at a time, stirring constantly between each handful, until slightly wilted and more spinach can fit in the skillet. Cook until the spinach is completely wilted but still a vibrant green, about 5 minutes. Stir in the sambal oelek, 1 teaspoon salt and a few grinds of black pepper. Transfer to a serving platter or bowl.

I love sautéed spinach but this recipe takes it to the highest level!  I had no idea black garlic and a little bit of asian chili sauce could transform sautéed  spinach!  This is the easiest and most delicious side dish you can make, not to mention healthy!
