Spinach-Stuffed Turkey Meatloaf

With ground turkey and vegetables, this delectable red chili has just the proper amount of heat to keep you warm. Perfect with a drink, at a football game, on a chilly winter evening, or on top of a hot dog. This dish will satisfy everyone! made either on the stovetop or in a slow cooker. Serve with cornbread on the side, topped with light sour cream, fresh cilantro, green onion, and crumbled Cheddar cheese.

Ingredients

  1. cooking spray
  2. 1 cup coarsely chopped mushrooms
  3. ¼ cup chopped onion
  4. 1 (10 ounce) package frozen chopped spinach, thawed and drained
  5. ½ cup shredded part-skim mozzarella cheese, divided
  6. ¼ cup grated Parmesan cheese
  7. 1 pound 99%-lean ground turkey breast
  8. ¾ cup Quaker Oats (Quick or Old Fashioned, uncooked)
  9. ½ cup fat-free milk
  10. 1 egg white, lightly beaten
  11. 1 teaspoon dried Italian seasoning blend
  12. ½ teaspoon salt (Optional)
  13. ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Lightly grease a medium skillet with cooking spray and place over medium-low heat. Cook and stir mushrooms and onion in the hot skillet until onion is tender, about 4 minutes. Remove from heat.
  3. Add spinach, 1/4 cup mozzarella cheese, and Parmesan cheese; mix well and set aside.
  4. Combine turkey, oats, milk, egg white, Italian seasoning, salt, and pepper in a large bowl; mix lightly but thoroughly.
  5. Spoon 2/3 of the turkey mixture lengthwise down the center of an 11×7-inch glass baking dish. Form a deep indentation down the middle of turkey mixture; fill indentation with spinach mixture.
  6. Top with remaining turkey mixture, forming a loaf. Seal the edges to completely enclose spinach filling.
  7. Bake in the preheated oven until the juices run clear and an instant-read thermometer inserted into the meat reads 165 degrees F (75 degrees C), 30 to 35 minutes.
  8. Sprinkle meatloaf with remaining 1/4 cup mozzarella cheese. Continue baking until cheese melts, 1 to 2 minutes. Let rest for 5 minutes before slicing.

Delicious, love the spinach stuffing. I put marinara sauce on top and may mix in some of the spinach mix in the turkey next time but I will definitely make it again!

This was absolutely delicious. Made exactly as written except that I added some chopped fresh tomatoes to the spinach mix. A nice addition. Served it with mashed potatoes, gravy and cranberry sauce. My husband loved it. The gravy was such a nice compliment to the turkey loaf that I was thinking that next time I might try using poultry seasoning instead of Italian and adding gravy on top instead of the cheese, which really did not add much flavor. An all around great recipe.

I was excited to try this recipe. I made it exactly as described except I used a whole egg not just the egg white and fresh spinach rather than frozen. I am disappointed to report that it was very bland and therefore my rating of only 3 stars. Next time, I’ll need to add considerable seasoning to the meat and/or spinach filling.

I made this as written, except for using fresh spinach, which is what I had on hand. I sautéed the mushrooms and onions, then added the spinach to the skillet and sautéed just until it was wilted. The meat loaf was pretty good, but a bit bland; next time, I would add minced garlic and maybe some Worcestershire to the turkey. This is a healthy alternative to my usual (much-loved by my family) beef-based meat loaf. I’ll make it again, but will try to jazz it up a little.

I made it using 1 whole egg, whole milk, and I used sharp cheddar instead of mozzarella (just bc this is all what I had in the house) I also added about 1/2 tsp of ground fennel. It was absolutely delicious! An easy recipe, and 5 stars.

I made this with a few changes. Used 85% turkey and no milk, cheese or oats in the loaf part. Used 1/2 cup breadcrumbs instead. Filling made with mushrooms, onion & spinach. Added cheese as its own layer on top of the spinach. Very good!

I hate spinach so I used a dressing with broccoli florets only. Also I made individual sized loafs. Will have several meals from this.
